Turn your pantry staples into a comforting, golden Pie Recipe. Made with the premium wild-caught tuna, creamy cheese, and topped with flaky puff pastry, this single-serve pie is the ultimate easy dinner.
Makes 2 single-serve pies
Ingredients:
- 3 cans of East Coast Tuna Co tuna in Springwater, drained
- 3 tbsp of olive oil
- 1 brown onion, diced
- 1 cup of sliced button mushrooms
- 2 tbsp of tomato paste
- 1 tbsp of capers
- 1/3 cup of cream
- 1/3 cup of milk
- 1 tsp of corn flour
- 1 cup of grated tasty cheese
- 1 sheet of puff pastry, thawed
- 1 egg, lightly whisked
Method:
1. Add the olive oil to a large frying pan with the onions and mushrooms. Cook until softened.
2. Add the capers and tomato paste and stir through.
3. Add 3 cans of East Coast Tuna Co chunks in Springwater.
4. Mix the cornflour with the milk then add to the pan, along with the cream.
5. Bring to a simmer before turning off the heat and adding the tasty cheese. Stir, adding a dash more milk if the mixture is dry. Allow to cool slightly.
6. Cut the puff pastry into quarters (4 equal squares).
7. Spoon the pie mixture equally into two single-serve pie ramekins and top with two squares of pastry.
8. Poke holes in the pastry with a sharp knife and brush with the whisked egg.
9. Bake at 180°C (fan forced) for 25-30 minutes, or until the pastry is golden.
10. Serve immediately
