It’s a truely beautiful morning up here on the mountain. Cold yes, but crisp and clear. It’s been a really nice week with lots of fabulous customers thanks and it’s already today been quite busy. And this was some baking from earlier this morning for today’s trade. Cheers. W

Here’s Georgia (aka Captain Goodsmoke) getting the smoker going for a batch of brisket. Most bakeries boil the meat for their pies. Not us. Slow cooked and lightly smoked meat for our pies. And also, very happy to be back at the wonderful Rocklea market in Brisbane on Saturday mornings! (not this one as it’s Anzac Day) it’s a fab market - all undercover, free undercover parking and over 100 stalls. Loads of well priced fresh produce and very good coffee too. Thanks all. Wayne

So, much prepping getting ready for Easter. Cheyenne making a sh*te load of puff pastry for our pie tops and sausage rolls, Georgia doing much packing of pies, and some more cheese made including our Feta for the spinach and Feta rolls along with my first batch of Ash Blue and a truely lovely Brie. Myself and the team would love to see you across Easter. Thanks. W

My cheese making is coming along. This latest batch the best yet including chilli infused small rounds as well as some with dried garden herbs. I’ll start selling my freshly made feta (including a lightly smoked version) within a couple of months from the Gallery Walk shop. The chilli feta found its way into the spinach and feta rolls I’ve made this morning that we’ll have at the Gallery shop today from around 9.30. W

Just pulled a bake of rolls out of the oven. Spinach and Feta, Beef, and now for the first time since opening Tambo, the Lamb and Harissa. It has roasted almonds, currents and our house made Harissa paste. It’s definitely the business. Both Gallery Walk and School Roads shops open tomorrow from around 8. Cheers. W

Cutting curd for the next batch of feta. Love making cheese. Tamborine Mountain truely is the land of beautiful creatures and flora. I’ve never seen this one before. And some late afternoon baking for Sundays pies. We are open today at the Gallery Walk shop, as will we be tomorrow for Australia Day. We are going to open early at 8am to beat some of the forecast heat. Luna, Sam’s lovely new puppy I recon thinks thats a good idea anyway. W
