Did you know Yuzu & Okinawan Lime are two distinctly Japanese citrus fruits?

Yuzu is highly aromatic, with flavours somewhere between lemon, mandarin and grapefruit. Okinawan Lime, also known as shikuwasa, is a small citrus native to Okinawa. Tart, zesty and often compared to lime and mandarin.

Welcome to White Kat Cielo Soda 🙌 We’re pretty excited about this one.

Created by Carl ‘The Prez’ Libonati and Freddie ‘Rico’ Clouston, Cielo was born from a passion for better soft drinks and a simple idea. To make the drinks they wanted to drink but couldn’t find. With serious culinary experience behind the brand (and soft drinks quite literally in Freddie’s blood as the grandson of a former Kirks owner), they know a thing or two about making something delicious.

Cielo is not your average soda. Made with high quality natural ingredients and less natural sugar than standard soft drinks, they’re designed to be enjoyed however you like.

Drink them straight. Pour them over ice. Mix them into something. Or simply crack one open.

They’re a fun addition to any drinks list. Whether you’re looking for a delicious non alcoholic option, something a little different for the café fridge or a seriously good mixer behind the bar.

We’re kicking things off with three flavours:

🍋‍🟩 Yuzu & Okinawan Lime / vibrant Japanese citrus with a fresh, zesty finish.
🍋 Limonata Rosata – Pink Lemon / kumquat and mandarin with delicate hibiscus and lemon verbena.

It’s International Cabernet Sauvignon Day, so for this month’s Staff Pick, we asked Dani to choose a Cabernet from the White Kat portfolio. Her pick? Karrawatta 2019 Christo’s Paddock Cabernet Sauvignon from Langhorne Creek.

“I love a big red, especially on a cold winter’s night, so Cabernet is always going to be up there for me. This one is rich and full bodied, with blackcurrant, cassis and blueberry, spicy French oak and plenty of depth. Exactly what I want in a Cabernet.”

Dani’s fun fact: Cabernet Sauvignon is actually a natural cross between Cabernet Franc and Sauvignon Blanc, which explains where the Cabernet and Sauvignon in its name come from!

And with 95 Halliday points, this one’s well worth raising a glass to today.

Ever wondered why a bottle of w**e is 750mL… and not a nice round 1 litre?

The glassblower theory is one of the most popular explanations, dating back to when bottles were individually blown by hand.

But there’s another theory tied to trade. When French w**e was exported to Britain, 750mL worked neatly with the imperial gallon system. Six 750mL bottles equalled roughly one imperial gallon, making cases easier to buy, sell and ship.

Whatever the real origin, 750mL eventually became the international standard we know today.

A huge congratulations to All Saints Estate with their Museum Muscadelle NV named Fortified W**e of the Year in the 2027 Halliday W**e Companion Awards, receiving a perfect 100 point score.

The award marks an incredible fourth consecutive Fortified W**e of the Year title for All Saints, who have also retained their Five Red Stars for the 20th consecutive year, placing them among the top 2% of Australian w**eries.

An extraordinary achievement from one of Rutherglen’s most iconic producers and one we’re very proud to represent in the White Kat portfolio.

Just one week to go and spots are limited! Get the babysitter locked in, get that catch up out of the group chat and lock in your table. Next Friday 28th August, D’SAS w**emaker Matthew Di Sciascio is heading to THE COAST RESTAURANT for a special ‘Local W**e Night’.

Matt’s w**es are deeply rooted in family, food and his Italian heritage, inspired by a belief that a bottle of w**e can capture a time, a place and a memory.

Expect a locally inspired four course menu from The Coast, beautiful w**es and the chance to sit down with the w**emaker himself.
