Here's a delicious recipe for Snowy River lamb shoulder roast:
Ingredients:
1 Snowy River lamb shoulder roast
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons olive oil
Salt and pepper to taste
1 cup chicken or beef broth
1/2 cup red wine (optional)
2 tablespoons balsamic vinegar
2 tablespoons honey
2 onions, sliced
4 carrots, peeled and cut into chunks
4 potatoes, peeled and cut into chunks
Instructions:
Preheat the Oven: Preheat your oven to 160ยฐC.
Prepare the Lamb: In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper. Rub this mixture all over the lamb shoulder, ensuring it's evenly coated.
Sear the Lamb: Heat a large skillet over medium-high heat. Sear the lamb shoulder on all sides until nicely browned, about 3-4 minutes per side.
Prepare the Roasting Pan: Place the sliced onions, carrots, and potatoes in the bottom of a roasting pan. Season them lightly with salt and pepper.
Place the Lamb in the Roasting Pan: Place the seared lamb shoulder on top of the bed of vegetables in the roasting pan.
Make the Braising Liquid: In a separate bowl, mix together the chicken or beef broth, red wine (if using), balsamic vinegar, and honey.
Braise the Lamb: Pour the braising liquid over the lamb shoulder in the roasting pan.
Cover and Roast: Cover the roasting pan tightly with aluminum foil or a lid. Place it in the preheated oven and roast for about 3 to 4 hours, or until the lamb is tender and easily pulls apart with a fork.
Baste Occasionally: Every hour or so, remove the roasting pan from the oven and baste the lamb with the juices from the bottom of the pan.
Serve: Once the lamb is cooked through and tender, remove it from the oven. Let it rest for a few minutes before slicing. Serve the sliced lamb shoulder with the roasted vegetables and pan juices.
Optional Gravy: If desired, you can strain the pan juices and vegetables, then thicken the juices with a bit of flour or cornstarch mixed with water to make a delicious gravy to serve alongside the lamb.
