The cooler weather is officially here… which means one thing: parmis are back on repeat (Recipe Below)
But instead of heading out, this is your sign to make one at home. And honestly, it’s easier than you think.
Crispy, golden crumbed mushrooms layered with rich tomato sauce and melty cheese… it’s everything you love about a classic parmi, just done your way, in your kitchen.
No complicated techniques. No “special occasion only” energy.
Just the kind of meal you already know how to make, with a little mushroom upgrade.
Perfect for a cosy night in, when you want something warm, satisfying, and a bit nostalgic… without overthinking it.
Serves 2
Ingredients
30 g panko crumbs
50 g grated parmesan, divided (40 g + 10 g)
¾ tsp dried oregano (½ tsp + ¼ tsp)
30 g plain flour
1 egg
½ tbsp milk
4 large flat mushrooms
Olive oil spray
1 tbsp olive oil
1 garlic clove, finely chopped
400 g tinned chopped tomatoes
1 tsp salt
75 g mozzarella, shredded
To serve
Fresh basil leaves
Chilli flakes (optional)
How to make them
-In a shallow bowl, combine panko crumbs, 40 g parmesan, and ½ tsp oregano.
-In another bowl, whisk egg and milk. Place flour in a separate bowl.
-Prep mushrooms (remove stalks, peel if you like).
-Coat in flour → egg → crumb mixture.
-Place on a tray and spray with olive oil.
- Air fry at 180°C for ~12 minutes until golden (you should be able to do all 4 at once depending on size).
Make sauce:
-Heat olive oil, cook garlic 1 minute. Add tomatoes, remaining oregano, and salt.
- Simmer 10 minutes.
Preheat oven to 200°C.
-In a small baking dish: Layer 2 mushrooms + ⅓ sauce + ⅓ mozzarella
-Repeat with remaining mushrooms, sauce, mozzarella
-Finish with remaining parmesan
-Bake ~15 minutes until golden and bubbling.
-Top with basil + chilli flakes and serve.
