Thai Red Chicken Curry 🍛
It's been years since I made this dish (and the sauce has more cornflour now I think as I remember it being very runny before but now it is perfect 😍)

The red curry paste zip locked in my freezer has been taunting me for some time now. It was worth it. Definitely make this! And do your tastebuds a favour and make the red curry paste on Cookidoo first. Curry pastes in the thermo are incredible 🤤

This week I delivered my last ever TM6 (even though they sold out in May!)
I love being part of surprise gifts, and this was one of the best.

Because our beautiful giftee Bronte, who turned 21 yesterday is the daughter of one of my customers Kellie. And since I first delivered Kellie her first Thermomix 9yrs ago, I've watched Bronte and her sister Logan grow up using it.
I've been blessed to form a friendship with Kel, watching each other's lives on the sidelines. Divorce (for us both), kids growing up and moving out, new love. I've watched her beautiful girls growing up on FB and their mum has kept me updated with stories, like when she gifted Bronte her TM5 and upgraded to the TM6 and Bronte took the thermo to live in central QLD.

I loved catching up with these wonderful women, and to see the difference owning a Thermomix makes! We all laughed about how we keep crusts in the freezer to make breadcrumbs, would never eat frozen pizza and buy block cheese. 😂

So glad you came along to your friends demo in Wagga all those years ago Kel and met the Thermomix and I ❤️

Lamb Souvlaki and couscous salad. Incredible. Delicious. Easy. Fresh, healthy ingredients and you'll feel like you're actually a Greek masterchef.

Thank you for running our Cookalong with this dish this week . It's one of the best Cookalong dishes we've done and one that I wouldn't have thought of making myself. It's served me dinner Sunday and lunch Monday and Tuesday. 😍

My edits- I left out the olives because I don't like them and used red capsicum (because it tastes better than green and also because thats what I had.
