Crusty Italian Bread
Ingredients:
• 1 1/3 cups warm water
• 2 1/4 teaspoons yeast
• 1 tablespoon brown sugar
• 1 1/2 teaspoons salt
• 1 1/2 teaspoons olive oil
• 4 cups flour
Directions:
1. In my mixing bowl, I combine warm water, yeast, and brown sugar. I stir and let it stand for a few minutes until it begins to bubble and foam.
2. I add olive oil and salt, mixing well, and gradually incorporate the flour. I add enough flour for the dough to pull away from the sides of the bowl, using the dough hook to mix for a few minutes.
3. I cover the bowl and let the dough rise until doubled, which takes approximately 30 minutes.
4. Once the dough has risen, I punch it down, divide it into two, and shape it into two loaves. (Note: If I'm doubling the recipe, I adjust accordingly.)
5. I cover the loaves with a damp cloth and let them rise until doubled.
6. Preheat my oven to 375 degrees.
7. In a separate bowl, I beat together 1 egg and 1 tablespoon water. I brush this mixture over the risen loaves.
8. With a sharp knife, I make a single, quick, long cut down the center of each loaf.
9. To create the perfect crust, I place at least 1 cup of hot water in a shallow pan on the rack underneath the bread in the oven. I monitor and add additional water during baking to prevent evaporation.
10. I bake for 25-30 minutes or until the loaves turn golden brown and produce a hollow sound when tapped.
11. After removing from the pan, I let the loaves cool on racks. Optionally, I rub butter over the hot crust for added flavor.
