latest releases move deeper into site, farming & texture - pulling together organically & biodynamically farmed parcels from Blewitt Springs, Clarendon & the Limestone Coast into a collection that feels both distinctly Australian & quietly European at the same time.

The Everyday Series sourced from Greg Koch’s vineyard on the Limestone Coast continues to absolutely overdeliver. Farmed biodynamically for more than a decade on limestone soils, these wines somehow manage to be dangerously drinkable while still carrying proper detail & complexity. The 2024 Amber has stepped into more serious orange wine territory - all savoury spice, orchard fruit & salty oxidative edges. The new Field White is lush, saline & textural in all the right ways. Field Red remains one of the more versatile “lunchtime reds” we work with — light on its feet but layered, lees derived comfort & quietly structured.

Then there’s the Flowers releases from McLaren Vale’s luminaries Yangarra & Hickinbotham. Old bush-vine Grenache planted in 1946 on ancient North Maslin Sands. Roussanne from ironstone & weathered sands. Grenache Blanc raised for two years on lees. A Clarendon Syrah from vines planted in 1962 that feels more Côte-Rôtie than blockbuster McLaren Vale.

These are not wines chasing volume, makeup or trend. They’re wines of farming, patience & restraint. Long élevage old oak on full solids, no hurry. The kind of wines that slowly unravel in the glass & become more compelling with air, temperature & time.

This Friday from 5pm, we’ll be pouring wines from some of our favourite growers at - one of Sydney’s newest & great little hole-in-the-wall wine bars. European in spirit, impossibly relaxed, delicious snacks, and the kind of place you accidentally stay at all night (tried and tested)!

There’s also something particularly special for me (Dan) about this one. I used to work with Greg and Phil donkey’s years ago, and the fact we still get to work together today brings me a huge amount of joy. They genuinely rock, and continue to do incredible things for wine culture in Sydney.

At nearly 1,200 years old, Weingut Staffelter Hof is widely considered the oldest continuously operating winery in the world, with roots tracing back to 862AD. Once owned by the Benedictine Abbey of Stavelot, it passed into the hands of the Klein family following the French Revolution - who continue to farm it today.

Time moves differently here. Steep, slate-rich vineyards rise above the Mosel, while the cellar hums with centuries of quiet continuity. But this is not a house resting on history.

Now led by 10th-generation winemaker Jan Matthias Klein , Staffelter-Hof sits in a compelling contradiction - one of the oldest estates in the world, yet among the most forward-thinking in the Mosel. Since taking over in 2014, Jan has reshaped the estate through a gradual shift: certified organic farming (from 2011), and wines made without additions, guided by observation over control.

Across 14 hectares, vineyards are farmed organically & increasingly regeneratively - cover crops flourish, soils are treated as living systems, and trees are integrated through the rows to restore biodiversity and resilience.

This thinking culminates in Kant-Weinwald - a reimagined vineyard of the future. Once abandoned, now an amphitheatre of vines, trees, & open corridors, it confronts the realities of modern farming: climate pressure, disease, and labour intensity.

As Jamie Goode observed, the goal is not just to farm more gently, but “to develop a system transferable to other climates.” Disease-resistant PIWI varieties & vitiforestry form the backbone - reducing inputs while rebuilding ecosystem health.

If the estate tells a story of inheritance, then the new ‘The Grape Resistance’ wines speaks to what comes next - wines shaped not by style, but by system. Resilient, adaptive, and grounded in the belief that the future of the Mosel lies not in perfection, but in balance. 🐺

Southeast Sicily, far from the volcanic drama of Etna - the Hyblaean plateau rolls quietly toward the sea. Around Chiaramonte Gulfi, limestone ridges, olive groves & old vines shape a landscape defined by agriculture spanning millennia, rather than appellation.

Altitude brings relief from the heat, while cooling Mediterranean air preserves freshness in the fruit. The soils are pale, fractured limestone with very little topsoil, forcing vines to root deeply in search of water and nutrients - a place that naturally favours tension over weight, detail over power. It’s here that was founded in 2022 by Nikolas Resin & Waiata May Kalma-de Jong...

Their path was anything but direct, from early harvests in South Africa to Terroir al Límit in Priorat, then to COS, alongside formative time at Domaine Matassa & Kindeli - shaping a philosophy grounded in low impact farming.

Drawn back repeatedly by Sicily’s light and agricultural depth, they returned with their young family and established a 3.8ha regenerative farm — old vines, olive trees, vegetables & wild growth existing as one living system. Farming is organic & regenerative, with a focus on soil life and balance. In the cellar: no additions, no force - just gentle extraction, patience & trust in the fruit.

The wines reflect this approach. Not loud, nor polished - but quietly precise, mineral & alive.Less statement, more conversation. A different lens on Sicily - limestone over lava, agriculture over spectacle. A young project, but already a deeply considered one.

Across the river from Barolo & Barbaresco lies Roero - less manicured, shaped by ancient seabed soils of sand, clay & fossil.
This is where .wine began.

Founded in 2015 by sommeliers-turned-growers Giuseppe Amato & Kyriaki Kalimeri, the project started with a neglected half-hectare of Nebbiolo on steep, overgrown slopes, now a “heroic” vineyard of back breaking intensity, farmed entirely by hand.

Today they farm just a few hectares across Corneliano d’Alba - sandy soils, old vines, verdant forests all around, working biodynamically with minimal intervention in the cellar.

The wines are pure Roero: lifted, fragrant, finely textured. Arneis, Malvasia & Moscato Bianco, Riesling & Traminer, Favorita, Bragat Rosa, Nebbiolo - alongside skin-contact expressions & long macerations bottled simply as Vino da Tavola to preserve freedom of expression. In Roero sands we trust!

A fresh drop from , a small project that’s quickly become one of the most exciting voices in Austria’s new wave of growers. The story begins with three friends - Paul Schuster, Simon Ecker and Dave Ferris - who met during the 2018 harvest at Partida Creus. Encouraged by Massimo Marchiori to start making wine themselves, the idea eventually took shape back home in eastern Austria.

Before launching the project in 2019, the trio spent time working across some of Europe’s most progressive cellars, including Domaine Matassa, Domaine Binner and 2Naturkinder - experiences that shaped their instinct for attentive farming, minimal cellar work & wines built on energy rather than sheer weight.

Today, they farm around 4ha across Burgenland, close to Lake Neusiedl on the edge of the Pannonian plain. Warm summers, cooling lake influence and a patchwork of gravel, loam and limestone soils give the wines equal ripeness and finesse.

The vineyards are farmed biodynamically, while the cellar approach stays intentionally light-touch: spontaneous fermentations, no additions, unfiltered wines and plenty of whole-cluster work. Short macerations and gentle extraction keep the wines lifted, textured and vibrant.

Varieties range from Grüner Veltliner and Welschriesling through to Blaufränkisch, Zweigelt and St. Laurent - all handled with the same guiding idea: freshness, drinkability and clarity of place. The wines are vibrant, energetic expressions of Burgenland - contemporary interpretations of a region that continues to evolve & inspire.

A fresh arrival of wicked wares from the Rheinhessen, a region that’s spent the last few decades quietly undoing its old reputation and replacing it with precision, intent and terroir-driven wines.

At the heart of this shift is .db . Based in Flörsheim-Dalsheim, Bianka & Daniel farm 16ha across Wonnegau and its surrounding villages, working organically since 2007, Demeter biodynamic since 2012 & proud members of La Renaissance des Appellations (Nicolas Joly’s Return to Terroir Co-Op).

Their vineyards sit among rolling hills, limestone and loess soils, benefiting from one of Germany’s warmest, most stable climates. The result is wines with ripeness and generosity, held in check with pucker and tension.

Riesling is the spine of the range, complemented by Müller-Thurgau, Furmint, Spätburgunder & Blaufränkisch to name just a few - all balanced, expressive and built for the dining table. Low intervention, high trust & integrity in farming, and a quiet confidence that speaks eloquently through the glass.

We’re thrilled to welcome Dylan Gatt to the Grafted Wines family as our new Sales Manager for Queensland & Northern Rivers!

Dylan joins the team with a wealth of experience, a real love of the industry, and a great feel for people. We’re excited for the energy and insight he’ll bring as he connects with our customers and shares our portfolio throughout the region.

You’ll be seeing more of Dylan soon, but first, here’s a quick intro;

“Hi, I’m Dylan. I’ve spent the past 12 years working in Brisbane hospitality, starting in craft beer before moving into local and independent wine five years ago. From 2021 to 2026, I ran front of house and curated wine lists at community-focused venues before joining Grafted Wines in 2026—a role I’m genuinely so excited about!

I’m currently completing an undergraduate degree in Wine Science at Charles Sturt University, with the goal of working in wine production under an experienced winemaker and, in time, running my own winery.

Outside of work and study, I enjoy bouldering, live music, good food, gaming, and time with friends. I share life with my partner, Seraphina, and our six-year-old Beagle x Cavalier, Billy. Music has always been central to my life—I’ve worked in music venues and have seen some 2,500 acts live - Waxahatchee, King Gizzard & The Lizard Wizard, and This Is Lorelei, just a few of my current muses on high rotation.

I’m deeply aligned with sustainable, organic, and biodynamic winegrowing. 
The communities built around these practices—and the care they extend beyond the vineyard—are what continue to motivate my work in wine and hospitality.”

Poppelvej’s story began in 2016 with one tonne of McLaren Vale Grenache. Uffe Deichmann, freshly settled in Australia after years working as a sommelier in Denmark - picked the fruit with Nicole, the woman he’d fallen for and would later marry. He calls it a romantic beginning; she recalls sunburn and hard labour. Either way, that first batch became the ‘Rookie’ cuvée and the quiet beginning of something much bigger.

The 2025 release marks the 9th vintage of ‘Rookie’ - a milestone that feels both surreal and deeply deserved for Uffe and the evolution of his wines.

A long way from Copenhagen’s dining rooms, Uffe has rooted himself firmly in McLaren Vale, drawn to its Mediterranean climate, Gulf breezes, and the grounding familiarity of farming. From his organically tended Paeroa vineyard to the growers he works with across the Vale, there’s a distinctly Danish sense of restraint, purity, and honesty in the wines—unfussy, direct, and quietly expressive.

Over time, Uffe expanded his focus into the southern Adelaide Hills, especially Kuitpo Forest. With its elevation, Southern Ocean influence, and mineral soils, it offers a completely different register—freshness, tension, long growing seasons, and vivid natural acidity. Today, nearly half of Poppelvej’s wines come from this pocket of the Hills, adding nuance and brightness to the range.

The new Summer release captures the full spectrum of Uffe’s journey—from his Danish hospitality roots to life on Australian soil, from that first tonne of Grenache to the thriving, colourful landscape of wines he crafts today. Every bottle feels like a snapshot of place, season, and the quiet conviction that good wine doesn’t need embellishment - just clarity, care, and a deep respect for where it comes from. 🍷✨

A legend and dear friend, Uffe was one of the first to jump into the Grafted Wines portfolio. Alas, he truly believes Prince was overrated as an artist… what does he know?! Ya can’t win them all, I guess - or perhaps, even a broken clock is right twice a day. Regardless, I digress. Prince rulez x
