If you’ve got leftover roast lamb here’s an easy and delicious way to use it up and turn it into another meal.

Lamb souvlaki wraps are perfect for a casual lunch or a fuss-free dinner, and ready in just 10 minutes.

This one’s a hit with the whole family – fresh, full of flavour, and no one will even realise it’s leftovers.

What you’ll need:
Leftover roast lamb, thinly sliced
Souvlaki or pita bread
Red onion, thinly sliced
Cucumber, thinly sliced
Cherry tomatoes, chopped
Crumbed feta
Optional: fresh salad greens

For the garlic aioli:
1 cup mayonnaise
1½ tsp garlic powder
Juice and zest of ½ a lemon
1 tbsp chopped chives

To assemble:
Mix the garlic aioli ingredients together in a small bowl and set aside.

Warm your souvlaki or pita bread slightly, then layer with sliced lamb, onion, cucumber, tomatoes, feta, and salad if using.

Seasoned with San Elk Chicken Stock, garlic, thyme, and a touch of paprika, then slow-roasted until perfectly caramelised.
