Winter week 1 menu done.

Super happy how it all come together.

I had cut some considerably hours off my prep time by the end of that autumn menu.

My own personal feeling on this but after working for many years in numerous kitchens. I would come in as a Head Chef position. Menu hadn't been change in 1, 2, 5 years.

The team I would meet could very effectively pump that menu out, but with every single short cut in the book. Be it prep, cooking method, hot hold, etc and they were just there, night after night pumping out the same meals.

I would find my rhythm with the kitchen, the crew, most important the equipment. Within that first 2 weeks you figure out your suppliers, your front of house team, the time your guests come in.

Then its simple, every season your change the menu. Doesn't have to be a complete change but you really need to get the team a little uncomfortable get them motivated again to learn, prep with love, learn new timings and find the love they have in food again.

A chef would tell me they hadn't come up with a new special in ages with that first change of menu their head is already thinking of ideas that are in season, in trends, suit their station and equipment.

So you will always see a menu change from me every season. I will note down the key favourites that will become the keepsakes.

Meal prep has alot of elements. That Im still learning and perfecting. Meal Prep is portion control done for you, lightly seasoned and the stress of thinking what to cook for the next 50 years πŸ˜…

Seeing over 200 meals served at the Good Sam Inn this monday is always incredibly rewarding.

As a small family business, my wife and I put a lot of love into what we do through The Rub Whisperer. Whether it's our spices, meal preparation, catering, or community cook-ups, we've always believed that food has a way of bringing people together and showing people they are cared for.

Supporting the Good Sam Inn is one small way we can give back to a community that has supported us over the years. We're grateful to be able to contribute whenever we can and to work alongside such dedicated volunteers and staff who give their time so generously.

A big thank you to everyone involved. It takes a community to create real change, and it's inspiring to see so many people stepping up to help those doing it tough.

We're proud to be a small part of it and look forward to helping again in the future. ❀️
