🍓Strawberry Gum: one whiff conjures up scrumptious memories of lollies and bubble gum. It’s the original chewing gum! Indigenous Australians passing through the Northern Tablelands would often chew on the leaves of the Strawberry Gum for their sweet berry flavour. They would also moisten the leaves and lay them over a fire to release their fragrant oils, which would help to calm stomach problems (ref: Australian Superfood Company).
Mulga Jill Cheesecake
INGREDIENTS:
• 1 1⁄2 cups plain, sweet or digestive biscuits (approx. 150g) crushed
• 1⁄4 cup melted and cooled butter (60g)
• 1⁄4 cup freeze-dried strawberries, crumbled (optional)
• 450g cream cheese, at room temperature
• 1⁄2 cup Mulga Jill Chocolate Powder
• 1⁄2 cup whipping cream, cold
DIRECTIONS:
Melt butter in a saucepan on the stove top or in a microwave and allow to cool.
Break the biscuits into pieces and blitz in a food processor until they become fine crumbs. If you don’t have a processor,
you can put the crumbs into a zip-lock bag and roll over with a roller until you have fine crumbs.
Combine the biscuit crumbs, butter and freeze-dried strawberries in a bowl. Mix well and press into an 18cm springform pan or pie dish.
Freeze for 30 minutes.
Place cream cheese into a bowl and beat until fluffy
Add the Chocolate Powder and beat well until smooth and creamy.
In a separate bowl, beat the whipping cream until firm.
Add into the cream cheese mixture and fold gently to combine the two with a spatula or wooden spoon.
Pour mixture into your pan, pie dish or single-serve jars and gently tap the dish on the bench to settle mixture into the dish.
Refrigerate for 8 hours or until fully set.
Variations: use Snowflake, Piña Colada or Banana Custard Chocolate Powder instead of Mulga Jill.
