There's a lot happening at SIP this spring. 🎨

The Wollombi Valley Sculpture Festival rolls through 12–27 September, and we're proud to be one of the hubs, so there's never been a better time to make a weekend of it in the valley.

Here's a tip while you're planning your visit: skip the front door and come in the pretty way. Park around on Negro Street (plenty of spots, no circling required) and wander through the Grays Inn formal garden, up the stairs and in- honestly, one of the loveliest approaches to any drink stop in the Hunter.

There are plenty of signs, so you can't miss us!

And if a day trip isn't enough, stay the night. We've got three rooms upstairs at Grays Inn, ready to book mid-week or weekend, so you can really make the most of your time here. πŸ›οΈπŸ·

That's Michael, catching a rare quiet moment at SIP. Don't get used to it.... come Saturday, he'll be flat out behind the counter all day, and honestly, we wouldn't have it any other way.

There's a lot on this weekend. The artisan market is set up right next door, it's Father's Day weekend, and we've got plenty of ways to sort dad out. A bottle of wine, a good gin, a whiskey, or a beer, whatever he's into. And behind the scenes, we're already gearing up for the Wollombi Valley Sculpture Festival, kicking off 12 September and running through to the 27th, with SIP proud to be a hub for it all.

Come say hi to Michael while he's still got a minute to sit down. Saturday's going to be a good one.

Father's Day is coming up next month, and if Dad's a whisky drinker, we might just have the one. πŸ₯ƒ

Regalia Single Malt Whiskey from Phoenix Distilling Co. is triple pot-distilled right here in the Hunter Valley, made from a blend of four malted grains. Two types of barley, oat and rye, sourced from the Riverina. Matured in ex-bourbon barrels with a char and toast profile tailored to the grain bill, it's a whiskey with real depth.

Think toasted oak, bold caramel and warm spice on the nose, stone fruit, apple, pear and creamy vanilla on the palate, and a long, balanced finish.

46% ABV, $99 a bottle, but stock is limited, so if Dad's on your list, don't leave it too late. Pop into SIP to grab a bottle or pick one up as part of a gift.

Oh, and we also have cider. 🍏

The Original Sydney Cider, Sydney's original New World Cider, made with 100% Australian grown apples and fermented with Champagne yeast. It's got this complex apple flavour that's medium sweet with a crisp, clean finish. Basically, a cider for wine lovers.

Gluten free too, so it's an easy one to add to your tasting when you're next in. Available per can or in a case. $7 per can and in the fridge now.

What should be in your fridge right now? The 2025 Albarino from The Little Wine Company.

A Spanish variety that's found a real home here in the Hunter, grown in the Broke Fordwich sub-region on sandy soils along the Wollombi Brook. Hand-harvested at the end of January, made without oak, and left on lees for a little extra texture.

Expect spice, lime, a touch of salinity and a crisp, mouthwatering finish, the kind of wine that keeps your attention glass after glass.

93 Points, Shanteh Wale (WinePilot)

Only the third release of this wine and a low-yield, small-batch drop. $30 a bottle at SIP, while it lasts.

The 2024 Timbervines Tempranillo Graciano Shiraz from Margan, Broke Fordwich. A field blend of Tempranillo, Graciano and Shiraz, grown on the red volcanic soil of their Fordwich Sill vineyard.

Inspired by the great wine styles of Rioja, it's a bolder, more robust red for our region, while still staying elegant and aromatic.
