You can taste wine almost anywhere in the Hunter Valley. What’s rare is getting to hear the brand owner and winemaker in conversation - talking honestly about vision, philosophy, and what it really takes to build a boutique wine label.
That’s exactly what this afternoon is.

Join us at SIP Wollombi Village for an intimate, relaxed conversation with James Milson (Milson Estate) and winemaker Daniel Binet - followed by a guided tasting where every wine comes with the story behind it.

What to expect:
• How and why Milson Estate was created
• The philosophy and vision behind the wines
• How a winemaker translates a brand’s character into the bottle
• The realities of building a boutique Hunter Valley label
• A guided tasting with James and Daniel talking you through each wine
Spaces are limited. This is an experience for people who want to go a little deeper.

The wine shelf at SIP is growing - and we're happy about it.

Milson Estate is a family-owned boutique winery out of Broke, nestled under the Brokenback Mountain range. Their wines are hand-picked, small batch, and made by Dan Binet - one of the Hunter Valley's most respected winemakers. The kind of operation that chose quality over volume a long time ago and hasn't looked back.

We've got more of their range in now, including their Tahlee Vineyard Shiraz 2021. If you know Broke Shiraz, you already know why that matters. If you don't, come in and let us change that.

Some things are too good to let go.
The Noyce Brothers cellar door may have closed its chapter, but the wines haven't gone anywhere, and this Prosecco is exactly why.

Made in the Hunter, this is a local sparkling that actually earns the occasion. Light, fresh, 11.5% and finished with that satisfying cork-and-bail top that means business. Perfect occasion, the long weekend!

We still carry our favourite Noyce Brothers wines at SIP Wollombi Village, because some things are worth keeping close.

Two beers. One very good reason to stop in.
Sydney Brewery has been doing things right for a while now, and these two are proof.
If you're after something clean and classic, their Munich-style Lager is exactly that - subtle hops, refined malt, multi award-winning and made for a slow afternoon. $7 a can.

If you want something with a bit more swagger, the East Coast IPA brings citrus, tropical fruit and pine in a 7% pour that somehow still manages to go down easy. Six hops. Wave reviews. $7 a can.
