Absolutely anything goes, when it comes to a platter. 😊

Here's what we had today:
• The last of the grapes
• 1 mandarin
• 1 apple
• Onion Rings (open pack in the freezer)
• Easter eggs (...still going!)
• Ham + cheese toasties (the last of the sliced bread, needing using up)
• Mini muffins from the freezer (homemade in a big batch - banana + choc)
• Tomatoes + cucumber

Iron Deficiency- if you've ever had one, then you've probably read about the qualities of the super food 'chicken liver'.

I'm not here to delve into all the benefits, or debate the pleasantness (or unpleasantness for most people 😅)

I'm here with a recipe to make it something you might consider eating 😅 This is how I make it - hubby and I love it. The kids, ...well, they'll eat a few bites. But hey, that's a few mouthfuls more than zero, right!? 👊 Packed with protein + iron 💪

☆ Garlic + White Wine Chicken Livers ☆

》NEED
• 500g chicken livers $4
• 4 garlic cloves $0.40
• ½ cup white wine $0.50
• 2 Bay leaves - from our garden
• large pinch of freshly chopped parsley
• Pantry Staples: 1 tsp Hungarian paprika, 1 tsp curry powder, ½ tsp chicken stock powder, ½ tsp onion powder, 1 tbsp soy sauce, 2 tbsp olive oil
》》Total Recipe cost $4.90

》PREP
- peel + crush garlic cloves
- Slice bay leaves into strips
- marinate livers - place all items into a bowl, and gently toss to mix everything evenly. Let marinate in fridge for 30mins, or longer if time allows (overnight)

》COOK
- in a fry pan, low-medium heat, add a splash of olive oil. Place livers in a single layer, and cook until slightly brown on both sides. Must be cooked all the way through before eating, so cut in thickest part to check if cooked.
- place on serving plate and garnish with freshly chopped parsley

The best part about making pies for dinner, is the guaranteed dessert afterwards 😅😅

All those random shaped pastry off-cuts get a dollop of Nutella, Biscoff, peanut butter or whatever spread is in the pantry, folded up to whatever shape holds, and into the air fryer.  Air fryer 200°C for approx 8 mins (times vary) just do it until it puffs up and starts to golden. Finished with a light sprinkle of icing sugar.

We don't do desserts often, so the kids LOVED a sweet treat after dinner last night 😍😍

Key message: don't let those off-cut bits of pastry go to waste :)

You know a meal is good, when the family are requesting it AGAIN the very next day. Well, that's what's happened with these pies. There are so many things I make with left over roast pork, but these pies are a standout, and the kids are almost demanding it 😂

And who am I to tell them they can't eat delicious leftovers 😂

So, I know, ...not insta-worthy ...Not anything new ...But it's REAL LIFE and that's what I'm here for. So, tonight's frugal dinner is another round of Pork Roast Dinner Pies. 

(and much like last night's, all for under $6) Winning! 🎉

Use those leftovers! Tonight's dinner cost was a mere $5.45 for the 6 pastry sheets + grated cheese needed - the rest came from last night's dinner leftovers.

We actually like these pies a million times more than the original roast dinner meal. I think next time I get a pork roast, I'll be cooking it specifically to make pies 😂

Typically I'd use shortcrust pastry on the base, and puff pastry on the top, but I didn't have any shortcrust in the freezer, so it was puff pastry on top + bottom - and it was actually really nice - light + crispy.

》Made 12 pies:
• 6 sheets puff pastry
• 1 cup grated cheese
• Roast dinner leftovers

- chop leftover roast into small pieces & mix to combine evenly.
- using the pie cutter suited to your pie maker, cut the pastry into bases + tops. Place into pie maker, and spoon in the filling. Add gravy on top (it will cook + melt down into the pie) and add pastry lid. Close pie maker & cook until pastry puffs + turns golden brown.
- remove, and let cool for 5mins before eating. Repeat until all pies are made.
- devour!
