OUR NEW OBSESSION

Meet Death by Fermentation, and yes, the name is kind of a warning.

This is the pinnacle of the heat range, but what makes it special isn’t simply how hot it is. It’s double fermented with koji, creating an incredible depth of flavour underneath the serious chilli heat.

A wild combination of fruity habanero, bright Thai red chilli, roasted Australian carrots, garlic and koji fermentation. The result? Serious heat, but with complexity, savoury umami and that addictive fermented tang.

Meet Wellington Apiary, a Tasmanian honey producer founded in 2009 by Antonia and Robin O’Brien in a garden in the heart of Hobart.

What started with a few backyard hives has grown to hives across Tasmania with one simple philosophy, let the honey reflect the incredible flora of Tasmania.

Wellington Apiary honey is never heated during extraction or bottling. Instead, it is cold extracted and coarsely filtered, helping retain the natural pollen, aromas and flavours of the honey. And you can taste it.

La Dame is a beautiful semi-matured goat’s milk cheese with plenty of character.

When young, La Dame has a rustic, flaky and open texture with a delicately ye**ty rind.

As it matures, it softens beautifully, both in flavour and texture, revealing a deeper savoury, nutty richness beneath its earthy aroma.

Think flaky, soft, savoury & nutty.
