After hearing a few warning cracks, I had time to film half of this Mountain Ash gumtree falling to the ground. Likely due to recent rain, but any excuse will do for mountain ash to drop branches, temperature change, water, wind... Pedestrians?

A branch nearly got us yesterday...

A taste of summer with Truffled Peaches & Cream 🤤

Frozen truffle is thawed in Jersey cream. Demerara sugar is used for deeper flavour and a pinch of salt that's always required with truffle.
2 peaches, 2 tbls sugar, salt, 6g truffle, 300 ml cream
Serves 4-8

🌧️A wintery end to October is a good time to use the remaining September truffles. 😁

🌱Spring duck eggs have a rich flavour that works wonderfully with truffle. 🦆🥚

Early October experiments 🤤 with the final September truffles 😁
•Bluefin Otoro sashimi, with a Japanese style mayonnaise.
•Seared scallops on truffled celeriac puree
•The akami portion of the bluefin.

∆ Lani & Jager present today's harvest for the opening of Farmgate Sales 2025
Apparently today is "Take your dog to work day" For us that's everyday 🤣 There's more areas for us to hunt this weekend, ❄️ and they will be frosty mornings!

∆ There's a lot of large truffles, 50/50 with a friend? 😁🍽️

∆ All on scales for Farmgate tomorrow, plus whatever else we find in the mornings.

A late Autumn 🍁 has finally crossed over into WinterTruffle Season. With great growth conditions there's been a good amount of large truffles over the past few weeks (and as pictured, a lack of small ones 😅). 

With recent frosts ❄️ and cold nights 🌡️, this is expected to become a large amount of good truffles as we reach Winter Solstice this weekend. 😁

∆ Three frosts last week have helped the truffles develop.
∆ 16th May there was some colour, but negligible aroma or flavour. Garnish grade only 🤣
∆ A week later, there's good colour on some still ripening truffles
∆ These two have enough aroma to entice a second and third sniff, and were as ripe as they'll get. There was only these two from entire orchard though.

Some taste tests are required 😁 Season starts soon when they are both worth eating and in sufficient supply

∆🍁 Autumn colours have finally arrived this May, and with it cold nights 🌡️❄️
∆ 🐰Despite concerns of the incredibly warm April, the rabbits found some junk truffle that was trying to ripen early. This is encouraging, they've still been ripening despite the warm Autumn.
∆ 🥧 A truffle quiche proved the frozen ❄️ truffle inside is far far better than cosmetic garnish grade junk on top 🤣 though it did contribute a tiny bit of smell, it's not what you would want to see on a plate you actually paid for😅

∆ 🥔Instagram inspired idea of boiled potatoes to make the quiche crust. Quick, easy and delicious!
