Feta almond cheese - oven baked, with hot honey Fasolada - authentic Greek white bean soup

Hi there 😀

Well it’s coming up to February, and we promised we would let you all know what our plans were for our small business.

David and I have decided not to re-open MandalaVGF in the current economic environment - we have done our research and have spoken to a lot of hospitality people - people that are still in the industry and people telling us of their past experiences. But as they say - never say never! As and when the stars align we will be back for round 2.

When I shut the shop in October the first thing that revealed itself to me was how much I hadn’t been home, and how much of my mind and thinking our little adventure took up.
It was weird, suddenly not thinking about it anymore!

We both miss aspects of being in business for ourselves - especially our beautiful customers. We also loved that the overall experience was fun and positive.

I’ve been perusing recipes on Pinterest that I would like to try and also have my eye on a vegan cheese making workshop at Archie AM PM

David and I are both working part time, David with his wordsmithing and I’m working part time with Domestics PLUS Queensland. My Mum is off exploring the Great Ocean Road and Georgie and Sofia have just started year 12.

I hope to see a lot of you around Wynnum and Manly when I’m there on and off. Take good care of yourselves and your families.

Tickets are live for my Christmas Vegan Cheese Making Class!

Cheese-making, champagne, dinner—and all the festive vibes? Yes, please!

With the holiday season in full swing, join us for a fun and hands-on evening where we’ll craft five simple, quick, and delicious vegan cheeses using everyday ingredients you probably already have in your kitchen.

Class Details: Upon arrival, you’ll be greeted with a refreshing non-alcoholic mimosa, then we’ll dive straight into dinner. And what’s on the menu? A hearty selection of Mel’s favourite pizzas, topped with her signature, melty vegan cheese!

After dinner, it’s time to roll up your sleeves and get into cheese-making! You’ll have your own station set up with all the necessary equipment and ingredients, plus a recipe booklet to take home. Throughout the evening, you’ll create and taste four different cheeses, each chosen for their unique textures and flavours.

The cheeses you'll be making:
1. Baked Cashew Cheese with Native Pepper Berry
2. Soft Cranberry Festive Log with Miso and Thyme
3. Classic Toasted Almond and Apricot
4. Smokey Gouda-Style

Plus, as a bonus, you'll also enjoy a taste of Mel’s 5-minute Sun-Dried Tomato Cream Cheese—quick, easy, and oh-so-delicious. You’ll even get the recipe to take home with you!

Although this might be your first time making cheese, we know you’re no stranger to pairing cheese with bubbly! Feel free to bring your own alcoholic beverage to enjoy throughout the evening. If you need something, there’s a bottle shop on-site for your convenience.

What you’ll take home:�At the end of the class, you’ll not only have a satisfied stomach from dinner and cheese sampling, but you’ll also leave with the four cheeses you made and your very own recipe booklet. Plus, you'll walk away with the skills and confidence to recreate these recipes at home and impress your friends and family.

Date & Time: Tuesday December 17.
Arrival from 5:45 PM for dinner and mingling. Class runs from 6:15 PM to 8:30 PM
