Beef Jerky is thinly sliced dried, cured meat. This snack has its origins with the indigenous Indian tribes of South America. ⁠

Traditionally, these tribes used traditional methods such as brining and smoking to extend the preservation of their meat. ⁠

We make our Beef Jerky from lean beef. This we cut into thin strips, rub with spices, before drying the strips of meat. It is rich in protein and low in fat. The perfect snack for between meals.⁠

With dry aging, meat is first hung in cold rooms for a certain period and then placed on racks. This takes into account 3 important pillars: relative humidity, temperature and drying time.

During the entire dry aging process, cold air circulates around the meat. This creates a dry crust on the outside. However, this crust is not responsible for spoilage.

The coordinated low relative humidity and temperature (0 – 2°C) in the cold room ensure that the water activity on the surface is so low that spoilage bacteria cannot form.

During dry aging, natural enzymes are created that break down the muscle tissue, making the meat exceptionally tender.
