Two of us knew nothing about wine. Trésor knew everything. That is how this started.

We kept finding bottles we loved in restaurants and then standing in a shop with no idea how to find them again. So we stopped looking. Trésor tastes, we drink, the good ones end up in a package. He writes something about every bottle. Read it, ignore it, learn it by heart and act like you always knew.

You do not have to search. That part is handled.

Most tastings build up to the biggest wine. Stéphane Tissot ends with the lightest.

Poulsard is pale enough to be mistaken for rosé, juicy, and fragile. The perfect bottle to go with the hot weather! After a row of concentrated reds, it’s the bottle that resets the table. “It works after every red,” he says.

Six bottles. That’s all we could get our hands on.

Vin Jaune from our Ami Stéphane Tissot. One grape: Savagnin. Six years and three months of ageing before anyone is even allowed to call it Vin Jaune and Stéphane was one of the first to start bottling his parcel by parcel.

This is not a bottle you open because you’re thirsty. It’s a meditation wine. Something to think about and talk about. Only two left in the bottleshop!

Six years in a barrel. Nobody touching it. Just a layer of yeast quietly doing its thing.

That’s vin jaune: the Jura’s little magic trick. And Stéphane’s whole craft is knowing exactly when to step back and let it happen. Which, it turns out, is the hardest part.
