NEW 1 MONTH RESIDENCY



Born in Guadeloupe and raised in Toulouse, our next resident chef has spent the last decade cooking in acclaimed kitchens across France, Norway and Copenhagen, including Bacquié, À L’aise, Maaemo and Geranium.

After years in fine dining, he took a different path: launching his own private chef business, opening restaurants, and cooking his way across France through pop-ups and residencies, from Perpignan to Bordeaux, La Rochelle, Toulouse and Paris.

His cooking is guided by curiosity, generosity and a simple goal: making people happy around the table.

Well, Jaime is back this week, free solo.

Today, he’s launched his own catering company, , a wink to his heritage, the Basque Country.

As an autodidact, he ventured out to Copenhagen, to eventually return to Ghent.

THIS MONDAY : KOLLEKTIV PETERNELL IN TOWN

Along with , we’ll be welcoming Paul Schuster from for a night dedicated to the wines of the domaine.
Based in Burgenland, Austria, Kollektiv Peternell produces vibrant low-intervention wines with plenty of character, freshness, and energy.

For one night only, the full selection will be available by the glass.
A dangerous level of freedom, really.

Throughout the evening, chef will be serving fresh spring rolls straight from the kitchen to keep everyone reasonably functional.

Come by for a glass. Or several.

NEW 3 WEEKS RESIDENCY



Jan Eugui Maliszewski, 25, is a chef born in Warsaw, raised between Poland, Spain, and France, following the rhythm of the seasons and enjoying a childhood close to nature.

Initially passionate about theater—training from the age of 12 at the Machulskich school—he discovered early on the pleasure of conveying emotions. But rather than the stage, he ultimately chose to tell his stories in the kitchen.

At 18, he moved to France to train in La Rochelle, before venturing into haute cuisine: a season at Vollmers (2 Michelin stars) in Malmö, then at L’Oustau de Baumanière (3 Michelin stars). He then continued his career in Paris, working in more relaxed bistronomic kitchens at Mensae, Au Petit Panisse, and later as sous-chef at Pluto.

Today, through his culinary residencies, Jan offers a vibrant and sensitive cuisine: raw, seasonal ingredients, worked with curiosity—fermentation, maceration, infusions—to reveal their full nuances. On his plates, he seeks balance through richness, playing with the intensity of flavors, pushing them to their breaking point to better harmonize them.

His guiding principle? To create a dialogue between the bounty of French terroir and the culinary and preservation techniques of Eastern Europe and the countries he has explored, in a free, vibrant, and profoundly human approach.

Originally from Taiwan and currently based in Paris, Yeh Chia-Yin is a chef exploring the intersection of seasonality, cultural exchange, and personal culinary practice.

After training in Paris and spending nearly ten years working in restaurants, she has recently begun developing her own cuisine through pop-ups and collaborations across Europe and Taiwan. Rooted in Taiwanese culinary memory and shaped by seasonal produce, her work builds quiet bridges between cultures and invites curiosity about Taiwan.

« After studying business between France and Mexico, I decided to make a living from my passion.
With a mother who is a wine merchant and brothers who are restaurateurs, it was inevitable.
I began my training at one of Paris’s great bistro institutions, , before continuing my journey in several Michelin-starred restaurants, most recently (two Michelin stars).
My cooking is built on a strong foundation of classic French cuisine, enriched by the culinary influences of my experiences and travels between Mexico, Asia, and Italy.
I focus on seasonal cooking, striving to use each ingredient in its entirety. »

Rebel wine bar, along with Vins Naturels, is inviting Julien Guillot for a one-night only party.
A majority of his cuvées will be served by the glass with more than fair prices, and you’ll be able to try for free some of the wines of the newest vintage!

The casa owner .bp will be grilling some sausages all night long and feed you with juicy hot dogs.
