Today, our Maîtres d’Hôtel came together for our big season kick-off.
New table settings, service guidelines, a few important reminders and, most importantly, a chance for new faces to meet the team and get ready for what’s ahead.
Everyone aligned. Let the new season begin. 🤝

One last creation before saying goodbye. 🎂

As their pastry internship comes to an end, our two Bocuse students are wrapping up their time at Choux de Bruxelles the sweetest way possible: finishing two birthday cakes !

A final creation, a final service, and a beautiful way to end their journey with our team. Thank you both for your creativity, dedication and all the sweet moments along the way. 🤍

The chef has spoken. 🫡
Before every service, the kitchen falls silent for a few minutes. Everyone is focused, listening carefully as the chef assigns roles, explains the flow and shows the brigade exactly how each plate should be presented.

Who does what, in which order, and how.

The purpose of this briefing? To ensure consistent plating from the first plate to the last.
Then, service begins. And everyone knows their part.
