Miso is een zeer oude Japanse fermentatietechniek. Boland Ferments maakt 'modern style miso', zoals dat in Japan heet. Dit houdt in dat je groenten toevoegt aan die authentieke techniek. Modern style miso biedt op die manier een extra dimensie op vlak van smaak en voedselbewaring.

De liefde voor miso, kimchi en andere gefermenteerde groenten, die in zijn jaren als chef steeds sterker werd, besloot Kyle Boland te bottelen in zijn eigen merk Boland Ferments. Maar daar stopt de missie niet: de magie van fermentatie wil hij tot in de Vlaamse keuken krijgen.

Fresh cucumber salad with Kimchi and dill.
👍🏻 bbq
👍🏻 cold noodles
————R E C I P E————
1. Slice the 🥒 (if you have a mandolin or peeler, use it 🙂)
2. Cut up the kimchi in matching shape to the 🥒.
3. Chop up garlic chives and dill (or dill flowers)
4. add a splash of soya sauce. (My 🥇 soy for this dish => sweet potato tamari from my miso.
5. Mix up all & taste for seasoning.

Receipt for panzanella salad! Ideal for this hot weather, to enjoy this years first 🍅 and ideal for BBQ time! Easy peasy , perfect to use leftover bread (don’t feed the 🦆) and with a delicious Beetroot Miso dressing. Where can you buy that… 🥸 spoil your daddy’s this weekend!

1: Stale bread lightly toasted with garlic
2: chop tomatoes, shallots, lovage and basil and add this into a bowl with the bread.
3: add 1 1/2 tsp of miso, a splash balsamico vinegar and a healthy splash of olive oil.
4: mix all around and add some cracked pepper and salt if needed.
Can add some extra oil or balsamic if wanted. And Smakelijk eten ☺️!

👉Bok Choy Kimchi with a nice spice and a lot of depth.
👉Ponytail Kimchi ( young daikon) not to spicy and a bit of smokiness.
They are very different in flavour but guaranteed to put a kick in your meal and a smile on your face. Get them while they last. Check the web shop. 🤔also 2 sweet deals in the web-shop as well.
