Meursault 2020
The story of this blend begins long before I ever blended my first lambic. It all started in the summer of 2012, on holiday in Beaujolais with one of my best friends and his father. His dad was the one who first introduced me to (natural) wine and lambic. Around that time, my dad and I had built up a small corner of the cellar with wine racks.
One summer evening, after a pizza with mozzarella that tasted suspiciously like goat cheese—yes, my French was even worse back then, and I hadn’t noticed I ordered mozzarella with goat cheese—we started talking about the wine cellar and my idea of placing a wine barrel down there to use as a little table to drink at.
My friend’s father made a few calls, and the next day we had confirmation: we could pick up a Burgundy barrel near Beaune, in the village of Meursault. The winemaker was Dutch, though I can’t recall the name of the winery anymore.
What I do vividly remember is having a heated argument with my friend about how to get that barrel into the car. I got so worked up that I just picked up the thing and carried it to the car on my own. That little feat of strength earned me an immediate offer for a summer job at the winery.
When we got back home, the barrel had no purpose other than to be a table. And so it stood in the wine cellar untouched from 2012 until 2019.
In 2019, when we started filling our first barrels, that old fellow was still standing there. And yes, that makes you wonder: what if…
