De voorbije periode hebben we Sips uitgebreid tot een volwaardig restaurant. Daar zijn we trots op.

Maar in de kern is en blijft Sips een wijnbar.
Daarom maken we de komende weken een bewuste beweging terug naar waar ons hart ligt: wijn, beleving en ontmoeting.

Dat betekent dat we afscheid nemen van de uitgebreide restaurantkaart.
In de plaats komt een verfijnde kleine kaart, tapasplanken, wijnflights, tasting-avonden, culinaire gastavonden en ook een webshop.

Sips is wijn.
Maar Sips is ook mensen.

Mich bracht karakter in onze keuken, lef in smaken en rust in de service.
Terwijl we evolueren naar dit nieuwe hoofdstuk, blijft hij achter de schermen mee werken aan het concept.

Sommige mensen verdwijnen niet.
Ze verschuiven gewoon van plaats.

We kijken ernaar uit om Sips scherper, persoonlijker en nog meer “Sips” te maken.
De huidige kaart blijft ongewijzigd tot het einde van de maand.
Wie nog graag uitgebreid bij ons komt tafelen, kan dus nog reserveren tot dan.

Every now and then, Siebe opens a bottle that deserves a moment in the spotlight.
Not on the menu, not forever. A wine Siebe is excited about and wants you to try.
Some hidden gems he wanted to keep but got convinced to share with you anyway.

This time we get to present to you: Temps Mêlés.
A beautiful red made in Saint-Marcel-D'ardeche. Not just any red, but one that they made following the solera system, using exclusively Grenache grapes.

Every year they take some wine out, and replenish it with the current vintage.

Siebe managed to get his hands on the only 24 bottles that entered Belgium this year. It contains wine from 2015-2019. Powerful, structured, refined, elegant, complex, juicy,... 🔥
