Let’s dive into this scrumptious recipe together!
Ingredients:
- 1 cup unsalted butter (divided)
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 eggs, beaten
- 2 cups graham cracker crumbs
- 1 cup finely chopped almonds
- 2 cups shredded coconut
- 1/2 cup heavy whipping cream (divided)
- 1/2 cup Bird's custard powder
- 2 teaspoons vanilla extract
- 4 cups powdered sugar
- 200 grams dark chocolate
Directions:
1. Grab a large saucepan and melt 1 cup of unsalted butter, granulated sugar, and cocoa powder over medium heat. Keep stirring often to avoid any accidental burning – we want all that chocolate goodness to shine! 🍫
2. Once everything is nice and melted, take the pan off the heat. Go ahead and whisk in those beaten eggs gradually while stirring continuously until the mixture is beautifully combined.
3. Now, it’s time to add a bit of crunch! Stir in the graham cracker crumbs, chopped almonds, and shredded coconut until everything is well mixed.
4. Line a 9x13-inch pan with parchment paper, and then press your mixture firmly into the bottom. This will be the heavenly base of your Nanaimo Bars!
5. In a separate mixing bowl, beat the remaining unsalted butter until it’s delightfully smooth. Add in the heavy cream, custard powder, and vanilla extract, mixing until you reach a creamy consistency that looks good enough to eat on its own!
6. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. It’s going to get super sweet and fluffy, just how we love it!
7. Spread this luscious custard filling evenly over your pressed crust, and then pop the pan in the freezer while we prepare the heavenly ganache. 🥄
8. In a small saucepan, gently melt the dark chocolate and 1/2 cup of heavy cream over low heat, stirring frequently until everything is gooey and smooth. Let it cool for about 10 minutes – patience is a virtue!
9. Take your bars out of the freezer, and pour that gorgeous ganache on top, spreading it evenly for a luscious finish. 🍫
10. Finally, place the bars back in the refrigerator for at least 4 hours to set completely. Once set, slice them into squares and get ready to indulge in a bite of pure bliss!
Enjoy your homemade Nanaimo Bars with family and friends. Trust me, they won’t last long! 😍
