EQUIPMENT NEEDED
Deep frying pot or Dutch oven & digital thermometer
Stainless steel tongs & wire cooling rack
Mixing bowls & shallow dredging tray
Small skillet for hot honey
Sharp chef knife
INSTRUCTIONS
Marinate: In a glass bowl, combine buttermilk, hot sauce, and seasonings. Add the chicken cutlets, toss to coat completely, and let marinate for at least 30 minutes (or up to overnight in the fridge).
Dredge: Whisk together all-purpose flour, cornstarch, and dry spices in a shallow tray. Remove each chicken cutlet from the marinade, press firmly into the flour mixture on both sides to create craggy ridges, and shake off any loose flour.
Fry: Heat 3 inches of oil to 350°F (175°C) in a deep pot. Fry the chicken cutlets in batches for 6–8 minutes, flipping halfway through, until deep golden-brown, crispy, and cooked to an internal temperature of 165°F (74°C). Drain on a wire rack.
Make the Glaze: In a skillet over low heat, gently warm honey, butter, hot sauce, and red pepper flakes until simmering and smooth. Immediately dip and toss each hot fried cutlet into the warm glaze until lacquered on all sides.
Toss the Slaw: In a bowl, toss the shredded crisp romaine lettuce with Caesar dressing and half of the grated parmesan until coated.
Assemble: Spread a layer of Caesar dressing across the toasted rolls. Lay down a hot honey glazed chicken cutlet, pile high with dressed Caesar slaw, shower with extra freshly grated Parmigiano-Reggiano, and close the sandwich.
Serve: Slice diagonally with a sharp serrated knife and serve immediately while the chicken is hot and the greens are cool and crisp!
💡 Chef's Tip: Don’t let the fried chicken sit in the glaze too long before assembling dip, coat, and immediately build your sandwich so the crust stays crunchy!
