Monday Morning Health TIP:
Don’t skip breakfast. Studies show that eating a proper breakfast is one of the most positive things you can do if you are trying to lose weight. Breakfast skippers tend to gain weight. A balanced breakfast includes fresh fruit or fruit juice, a high-fibre breakfast cereal and wholewheat toast.

Did you know?

Limiting the amount of meat you eat per week may reduce your chance of chronic conditions such as cancer, cardiovascular disease, diabetes, and obesity. Eating a lot of red or processed meats are linked to a higher risk of developing certain cancers. Ditching meat at your meals one day a week will encourage you to eat other foods that are good for your health. Plant-based diets that include veggies, fruits, grains, beans, and nuts are high in fiber, vitamins, and nutrients. Try it out folks

Although barley may not be as popular as other whole grains like oats, wheat, or even grain-of-the-moment quinoa, it has some impressive health benefits. Barley provides a range of important vitamins and minerals: fibre, selenium, B vitamins, copper, chromium, phosphorus, magnesium, niacin, and more. Try this easy to prepare and cost- effective risotto for a mid week vegetarian meal that is packed with flavour!
Ingredients
75g butter or Coconut oil
1 onion, finely chopped
800g-1kg butternut squash, peeled, seeds removed, diced
2 garlic cloves, finely chopped
1 litre pint Natures Choice vegetable stock
250g pearl barley, rinsed
2 sprigs sage, leaves picked and finely sliced
seasoning

Method
Heat a large saucepan over a medium heat. Add 25g/1oz of the butter/coconut oil and, once melted, add the onion and squash along with a pinch of salt. Gently fry for 10 minutes, or until the onion is translucent and the squash is softening. Add the garlic and continue to cook for two minutes, or until aromatic.
In a separate pan, warm the stock and half of the sage leaves.
Add 25g/1oz of the butter to the onion and squash and, once melted, add the pearl barley. Turn up the heat and cook for 2-3 minutes. Turn down the heat to medium and add a ladleful of warm stock. Stir well to mix and, once absorbed, add another ladleful, stirring now and again. Repeat this process until the stock is used up and the pearl barley is tender (about 30 minutes).
Once the barley is tender, taste and season to taste with salt and pepper. Add the remaining butter to the pan and stir through.
Serve the risotto garnished with the remaining sage.
