Better Than Takeout Chicken Fried Rice 🍚
Quick, simple, and packed with protein. This is one of those meals that comes together fast and uses ingredients most people already have in the kitchen. Our Neufeld Farms Boneless Skinless Chicken Breasts make it extra lean, tender, and perfect for fried rice.
Ingredients
• 2 Neufeld Farms boneless skinless chicken breasts, diced
• 3 cups cooked jasmine rice
• 2 eggs
• 1 cup frozen peas and carrots
• 3 green onions, sliced
• 3 cloves garlic, minced
• 3 tbsp soy sauce (or to taste)
• 1 tbsp sesame oil
• 1 tbsp cooking oil
• Salt and pepper to taste
Instructions
1. Cook the chicken
Heat cooking oil in a large skillet or wok over medium high heat. Add diced chicken, season lightly with salt and pepper, and cook until browned and cooked through. Remove from pan and set aside.
2. Scramble the eggs
In the same pan, push everything to one side and crack in the eggs. Scramble until just set.
3. Sauté the vegetables
Add garlic, peas, carrots, and green onions to the pan. Cook for 1–2 minutes until fragrant.
4. Add the rice
Stir in the cooked rice and break up any clumps. Let it fry for a couple minutes so the rice gets slightly crispy.
5. Bring it all together
Return the chicken to the pan. Add soy sauce and sesame oil. Toss everything together and cook another 1–2 minutes.
6. Serve hot
Garnish with extra green onions and enjoy!
Simple tip:
Cold, leftover rice makes the best fried rice because it stays fluffy and doesn’t get mushy.
