Taste is partly expectation.

We do not experience flavour in a vacuum. The name, glassware, colour, smell and memory of a drink are already telling our brain what should happen next.

That is what makes recreating classic cocktails difficult.

You can technically reproduce many of the flavour notes and still miss the experience people were expecting.

For me, that raises a more interesting question than whether a zero-proof drink tastes exactly like the original:

Sometimes familiarity actually makes a product harder to enjoy.

The second you call something an Old Fashioned, a Negroni, or a rum and Coke, people arrive with a memory of what that drink is supposed to taste like.

Now you are competing against that memory.

That is one of the things I took away from sitting down with Joanne. There may be more freedom in creating something people have never tasted before than trying to perfectly recreate something they already love.

Maybe the opportunity with non-alcoholic drinks is not better imitation.

Maybe it is giving people a new reference point altogether.
