Sometimes a pizza doesnât turn out exactly how you envisioned it. Here are some common problems and a few simple fixes to try.
1. Does your dough keep springing back?
The gluten may be too tight. Cover it and let it rest for 10â15 minutes before stretching again.
2. Is your pizza soggy in the centre?
Make sure the sauce isnât pooling in the middle. Spread a thin, even layer with a little dough still showing through. Go lighter with watery toppings, too.
3. Is your cheese making the pizza watery?
Drain fresh mozzarella well and pat it dry, or use low-moisture mozzarella instead.
4. Is the bottom pale while the top is done?
Preheat your pizza steel for 45â60 minutes at your ovenâs highest temperature. A hot oven doesnât always mean a fully heated steel. Once your steel is hot, your bake should take roughly 5 mins or less.
5. Are your toppings moving around when you cut?
Give your pizza a minute to cool. With a traditional pizza wheel, press down firmly and make one clean pass. Or try our Pizza Rocker for easier, cleaner cuts.
