Sometimes a pizza doesn’t turn out exactly how you envisioned it. Here are some common problems and a few simple fixes to try.

1. Does your dough keep springing back?
The gluten may be too tight. Cover it and let it rest for 10–15 minutes before stretching again.

2. Is your pizza soggy in the centre?
Make sure the sauce isn’t pooling in the middle. Spread a thin, even layer with a little dough still showing through. Go lighter with watery toppings, too.

3. Is your cheese making the pizza watery?
Drain fresh mozzarella well and pat it dry, or use low-moisture mozzarella instead.

4. Is the bottom pale while the top is done?
Preheat your pizza steel for 45–60 minutes at your oven’s highest temperature. A hot oven doesn’t always mean a fully heated steel. Once your steel is hot, your bake should take roughly 5 mins or less.

5. Are your toppings moving around when you cut?
Give your pizza a minute to cool. With a traditional pizza wheel, press down firmly and make one clean pass. Or try our Pizza Rocker for easier, cleaner cuts.

Remember that a few imperfect pizzas are part of learning. With practice, patience and the right tools, you’ll get better every time.

Smash Burger Recipe

I use this simple recipe by Chef Ryan Wiebe () all summer long!

What you will need:
- 1 lb ground beef, into 2.5-3 ounce balls
- 1/2 medium yellow or white onion, thinly sliced
- Salt and pepper to taste
- Your favourite cheese slices and your other favourite burger toppings ex. pickles, lettuce, bacon, tomato.
- And.. an Atlas Steel of course :)


How to:
Heat your bbq or flattop to medium high heat. If using a BBQ get out your Atlas Steel Gridiron and get it hot.

Once everything is hot, place a small amount of your thinly sliced onions onto the grill. Add a ball of your ground beef onto your onions and with your Atlas Burger Stamp smash those burgers down with ease!

Once all your burgers are smashed, season with salt and pepper. These won’t take long to cook so 2-3 mins per side or until a nice crust has formed. Flip, season again and add your cheese.

Build your masterpiece to your liking and enjoy!
