TEAM FORWARD SEAR! 🔥🥩

Yep… I said it. 😂

Cooked up this beautiful Picanha from the newly opened LaSalle Prime Meats and went forward sear on the Kamado Joe

Seasoned simply with Deryk Rader SPG because when the beef looks this good, you don’t need to mess around.

🔥 Hot sear first
🥩 Let that fat cap get HAPPY
🌡️ Then finish it indirect until perfectly cooked
🔪 Slice it up and try not to eat half of it before it hits the plate 😂

Reverse sear gets all the love… but I’m planting my flag.

FACE REVEAL. 😂

Okay, maybe not exactly. I’ve never been a mystery I just usually put the meat in front of the camera instead.

Probably the better choice. 😂

But for anyone who’s new around here:

I’m Mitchell and people on here call me Dutchie. 🇳🇱🔥

Born and raised in The Hague, Netherlands, now calling Canada home.

What started as me simply needing a spot to save recipes has turned into Dutchiecooks. Backyard BBQ, live-fire cooking, competitions, a whole lot of experimenting, and occasionally pretending I actually know what I’m doing. 😂🔥

Over the last few years I’ve gone from cooking in the backyard to stepping onto some pretty awesome competition stages, with the biggest being the World Food Championships.

Until now, Dutchiecooks has mostly been:

🥩 Meat
🔥 Fire
🔪 Slicing things unnecessarily close to the camera
🥪 Sandwiches that could feed a family of four
🍺 Beer

Going forward?

Pretty much the same…

Except now you poor bastards are going to have to look at me too. 😂

So expect more behind-the-scenes, competition days, recipes, wins, screw-ups, BBQ experiments and probably a little Dutch stubbornness mixed in.

Recap from the weekend. We did a small bbq for the last weekend my parents are visiting us. Beef cheeks, brisket, pulled pork. Al pastor, picanha. Name it and we made it ✌🏻
