Question: Do you offer smaller sides of beef?

Answer: Our steers are not sent to the butcher until they are “finished” which means they have nice marbling throughout the meat. While this means the animal is larger when it is butchered, it also means the steaks are larger and more flavorful. If we send an animal that is much smaller, you would not have nice flavorful and tender steaks because the fat content would be much less.

Question: I’ve gotten local beef in the past that was tough or had a weird flavor, how can I know that yours won’t be like that before I spend a bunch of money on a bulk order?

Answer: All of our beef comes from steers that are under 2 years old and we never sell old cull cows to our customers! So you can be sure that our steaks will not be tough.

Secondly, our steers are grass and barley fed, so they have a different fat content than an animal that is strictly fed on grass. Sometimes grass fed beef can have a gamey taste to it and often times less marbling, especially if the animal is smaller that it should be when it is processed.

We make sure that our beef is tender and flavorful through the way that it is fed and raised. But if you are hesitant, you can always try one of our taster boxes before you place a large order!

While this weather is frustrating for us, it’s extra hard on the livestock. 🌧️❄️🌬️

New calves and foals cannot tolerate cold rains like adults can, and even the mature horses and cows find this weather difficult since they’ve already shed out their winter coats.

We are happy to have gotten all the cows and their new calves back into the barn yesterday before the worst of the cold rains set in. Ryan has been busy checking on the newborns day and night, while more cows continue to have their calves inside away from the elements.

Foals and their mamas are patiently waiting in their stalls for warmer days and the mares are keeping warm under shelter with full bellies. Hopefully spring will be here soon 🌷
