Greek chicken tzatziki bowl !!

The best I ever made ..
chicken was grilled to perfection ..!absolutely delicious and moist .
Marination was extremely simple with few ingredients-
Lemon juice
Garlic
Parsley
Cilantro
Chili flakes
Olive oil , salt pepper and
Mayonnaise .
The bowl consisted of garlic and dil potatoes, grilled sweet peppers, salad with feta , pomegranate and pine nuts .. served with fresh tzatziki .
a complete meal in a bowl .

‘SPICY SOBA NOODLES’ - made with broccoli stems , carrots , French beans , spring onions etc .. I like these one pot meals .. easy and quick to make and loaded with goodness of vegetables..
broccoli stems can be used in many ways , in making vegetable stock , mix it with boiled potatoes and make fritters , in pastas etc ..
looking for some more unique recipes ..

Recently I attended International food festival here in Antigonish.
It was the most enriching experience .. Tasted so many different dishes ,
One of them was this delicious Iranian appetizer called Zeytoon Parvardeh made with green olives , walnuts, pomegranate molasses , mint etc …
Burst of flavours - tangy , sweet salty .
I just loved it !
