Anyway… I made chili crisp. Here’s what you’ll need:
1 L avocado oil
1 whole bulb garlic, peeled & thinly sliced
8 shallots, peeled & thinly sliced
1 cup chili flakes
1/2 cup toasted sesame seeds
3 tbsp honey
2 tbsp dark soya sauce
2 tbsp rice vinegar
2 tsp sea salt
1 tsp fresh cracked pepper
Heat oil to 300F. In batches, add garlic and fry until just golden. Remove and set aside. Add shallots & fry until golden & crispy. Remove and set aside.
In a heat proof bowl, add chili flakes, sesame seeds, salt, pepper, garlic & shallots. Carefully pour hot oil over top and stir to combine. Once slightly cooled, stir in soya sauce, vinegar & honey. Cool completely and transfer to jars.
