It’s always a good day when the crops are being harvested. The kids love visiting dad in the field to bring snacks and take a ride in the combine. This time we all enjoyed focaccia sandwiches made with Fresh Acres bread flour and somehow that felt like a full circle moment.

Harvesting time! Hard wheat is coming off the fields to be used in our bread flour and all purpose flours. See the green plants peeking through? That is a clover cover crop.

Super clean Organic fields of wheat like this are a pleasure to harvest.

Looking for a simple dinner ideas? Try this one!

Dice up onions, potatoes and ham into a casserole dish. Season with salt, pepper and garlic powder. Liberally coat the entire dish in heavy cream. Bake at 375F until potatoes are cooked through (stir occasionally if they are not cooking evenly). Add asparagus on top and sprinkle with cheese (we used marble and Grana Padano). Cook until asparagus is cooked and cheese is golden. Serve with your favourite sides like sauerkraut or a fresh salad.

Delicious homemade ciabatta buns are the perfect bun for homemade burgers. Even though we didn’t have all the fixings like lettuce and pickles these burgers were so good!

Ciabatta Buns

8 cups Fresh Acres Bread flour (or All Purpose)
4 tsp Instant Yeast
1 tsp Sugar
2 tsp Salt
4 cups Warm water

Mix dry ingredients. Add water. Mix with a spatula. The dough will be very wet. Let sit for 20 minutes. Using wet hands do 8 stretch and folds. Cover and let rise for 1 hour or until at least doubled. Heavily flour counter. Dump dough out. Flatten dough with hands or rolling pin to about 1 inch. Flour top of dough. Cut into 15 pieces and carefully transfer to baking sheet. Bake at 400F until cooked through (about 20 minutes). Enjoy with your favourite sandwich ingredients or use for hamburgers. Yum!

Tried a new dinner recipe and it was good! Greek Ground Beef Kebabs with homemade tzatziki and flatbread.

I am so happy to have discovered a flatbread recipe that is super simple with just 4 ingredients.

1 cup Greek Yogurt
2 cups Fresh Acres All Purpose Flour
1 tsp Baking Powder
3/4 tsp Salt

Mix dry ingredients together in a bowl. Add the yogurt. Combine until it forms a ball. Knead for a couple minutes. Divide dough into 8 pieces. Roll each section into a flatbread shape. Cook on a heavy pan until bubbles form. Flip and cook the other side for a couple minutes. Repeat with all the dough. Fill with feta, tzatziki, your choice of meat and Greek salad! Yum!
