Did you know that after roasting coffee it takes 24-48 hours for gasses to release from the roasted beans.

If a coffee does not have time to do this it can taste a bit off, have a crazy amount of crema during espresso pours or blow up the bag it is in with not ideal gasses

We like to have our coffee with the lid off its storage bin for 48 hours. Then we seal it up, as air then becomes what makes the aging prodess faster.

How much of the crema do you have? There are so many factors to crema, but what is it?

Espresso crema is sexy thin golden-brown foam that forms on top of an espresso shot.

Created when pressurized hot water extracts coffee oils and releases trapped CO2 from the grounds.

It’s made into the pinnacle of espresso, because it adds aroma, body, and a slightly richer mouthfeel, and a healthy crema often suggests fresh beans and good extraction BUT is not always proof it is a good shot or even good coffee
