Our coopers in action performing the final stage of our STR service - Shaved, Toasted, Re-Charred - to revitalize and enhance each barrel.

We’re currently completing 110 STR casks for our whisky client in British Columbia, carefully exposing the oak interior, toasting to develop complexity, and re-charring to create the perfect surface for maturation.

Nos tonneliers à l’œuvre réalisant la touche final du procédé STR - Shaved, Toasted, Re-Charred (rabotage, chauffe, rebrûlage) - pour redonner vie et caractère à la barrique.

Nous complétons actuellement 110 fûts STR pour notre client en Colombie-Britannique, en rabotant l’intérieur, en appliquant une chauffe contrôlée pour développer la complexité aromatique, puis en rebrûlant pour créer une surface idéale de maturation pour leur whisky.

Un savoir-faire précis au service d’un whisky d’exception.

Nothing like a bit of bourbon R&D to start off the week!

Tasting panel for our friends down at

Two very different mash bill, same maturation, comparable ABV (59.2% vs 56.4%) and nearly identical age (4.3 yr vs 4.4)….now which one will be finished in our very own Maple Brûlé cask?

Designed and built by our cooperage, the Maple Brûlé cask delivers complex flavor compounds, like roasted almond, maltol (s’mores) and quebecol (maple taffy) - perfect for adding depth and rounded edges to whisky and bourbon. Results are achieved as quickly as 4-5 month finishing - which in the world of aging spirits, is exceptionally fast.

From the Bas-Armagnac and Armagnac Tenarèze appellations, these freshly emptied casks are over 30 + years old and are available for reservation right now! These barrels impart huge flavors of rancio, to***co leaves, subtle oak, dried figs and prunes. They are perfectly suited for finishing different types of eaux-de-vie.
