Pork was the guest of the evening and it absolutely showed up.

Hot and fast grilled pork belly strips might just be the next “steak”. Crispy edges, juicy centers and a perfect balance of char and flavor. We kept it simple with smoked spices and let the fire do its thing.

Don’t stress about the flare-ups, work with them as they give flavor. Keep the meat moving, turn often, and watch it transform like it’s catching a slow Caribbean sun tan.

Hot pot began as a simple, practical meal along the Yangtze River during the Han Dynasty, where workers boiled whatever food they had in a shared pot to stay warm and fed.

As it spread, it evolved. In Chongqing, it became bold and spicy with Sichuan peppercorn and chilies. In Beijing it became more elegant, with thin sliced beef or lamb cooked in a spiced up broth.

Over time different versions appeared, but the core stayed the same: a shared pot where everyone cooks their own food.

Authentic hot pot isn’t about the ingredients, it’s about gathering, sharing, and connection.

I used to think the problem with my cooking was skill. Turns out… it was smoke.

Not the burnt kind but the deep, slow, wood-smoked kind that makes food taste like it came off a real pit instead of my kitchen stove.

For the longest time my BBQ (and honestly most of my cooking) had the same problem: it tasted fine… but never memorable. No depth and no that “what did you put in this?” moment.

Then we started experimenting with smoked ingredients.

A pinch of smoked paprika in eggs. Smoked chili on roasted veggies. A smoked garlic blend on steak.

Suddenly everything had that backyard-BBQ flavor, even on a random Tuesday.
