Carrot Cake Cobbler
1 Cup Flour
2 tsp Baking Powder
1/2 tsp kosher salt
3/4 Cup Granulated Sugar
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Cloves
1/2 Cup Unsweetened Applesauce
1/2 Cup Crushed Pineapple (drained)
1/4 Cup Whole Milk
1/4 Cup Butter, melted
1 1/2 tsp Pure Vanilla
1 Cup Grated Carrots
For the Topping:
1/3 Cup Granulated Sugar
1/3 Cup Light Brown Sugar
1/3 Cup Pecans or Walnuts, chopped
1 Cup Hot Water
How to Make It:
Preheat oven to 350 degrees.
Mix dry ingredients in a large mixing bowl, then stir in carrots & all wet ingredients (including crushed pineapple & applesauce).
Combine thoroughly.
Pour into a greased baking dish. I used a 10in casserole pan.
Sprinkle sugar + nut topping evenly over batter.
Pour hot water over the top. (donāt mix)
Bake 40-45 minutes or until golden. It should still look gooey.
Caramel Sauce Recipe
2 1/4 Cups Granulated Sugar
1 Cup Water
1T Lemon Juice
2 1/4 Cups Heavy Cream, warmed
3 T Pure Vanilla
1 T Kosher Salt
Place water, sugar & lemon juice in a large pot over medium heat.
Heat water, sugar & lemon juice to 340-350 degrees in a large saucepan without stirring. The sugar will turn a dark brown & begin to smell like caramel. You want to bring it to the point JUST BEFORE it burns. Make sure to have a candy thermometer on hand. If you do NOT have a candy thermometer, then look for even browning of the sugar mixture. It should be a deep golden brown.
Add warmed heavy cream (can microwave in 30 second intervals), vanilla extract & salt & whisk vigorously. The mixture will bubble up, so wear an oven mitt & PLEASE be careful.
You may need to return the mixture to the heat to melt any hard caramel chunks that seized while you were adding the heavy cream.
Allow to cool, then jar & enjoy!
