台灣米依劇外觀、口感、用途，
可以分為四個類別：🍚梗米🍚秈米🍚梗糯🍚秈糯

🍚 #梗米，俗稱『蓬萊米』
｜外觀：飽滿渾圓 晶瑩剔透。
｜口感：溼黏度微高、軟硬適中、香Q有嚼勁。
｜用途：一般米食 (ex.煮粥、定食、丼飯、咖哩飯、壽司、飯糰、便當…等)
⭐也是義式燉飯的米種首選！

🍚 #秈米，俗稱『在來米』
｜外觀：細長 透明度高。
｜口感：粒粒分明，蓬鬆無黏性。
｜用途：炒飯、粉漿製品 (ex.碗粿、蘿蔔糕、芋頭粿、河粉、米粉、米苔目、粄條…等)

🍚 #梗糯，俗稱『圓糯米』
｜外觀：實白圓短 不透明。
｜口感：黏性高，有明顯甜味，容易煮糊煮爛。
｜用途：常用於甜點 (ex.八寶粥、鹼粽、湯圓、麻糬、年糕、紅龜粿…等)
⭐也是酒釀的主要原料！

🍚 #秈糯，俗稱『長糯米』
｜外觀：實白細長 不透明。
｜口感：較硬挺扎實，黏度低易塑形、重複加熱不軟爛。
｜用途：常用於鹹食 (ex.油飯、米糕、粽子、珍珠丸、飯糰、鍋巴飯…等)

📌 #梗糯與秈糯，因為食用後容易消化不良，所以很少直接當主餐食用。
