🌿 Lisa Price – Founder of Carol’s Daughter, a beauty brand she started in her Brooklyn kitchen. Despite challenges, she grew it into a multimillion-dollar company now available worldwide.

🌿 Other Resilient Entrepreneurs – From kitchens to boardrooms, many women and men have fought through setbacks, discrimination, and doubt but chose persistence over defeat.

DAY 6: Jerk Is Resistance, Jerk Is Love

Jerk cooking was born out of resistance. It was a quiet act of rebellion a refusal to lose culture, flavor, or identity.

But it was also an act of love. Love for tradition, for community, and for the land that gave the Maroons shelter.

Every plate we serve at PK’s is made with that same love. We carry our ancestors’ spirit into the future, one meal at a time.

Jerk started as a hidden tradition in the hills but now, it’s a global celebration.

From Jamaican street corners to food festivals across the world, jerk has become a symbol of Caribbean pride. Still, not all jerk is created equal. Authentic jerk holds on to its roots the seasoning, the smoke, and the spirit of the people who made it.

Also known as allspice, pimento is the cornerstone of authentic jerk seasoning.

Native to Jamaica, pimento gives jerk its warm, smoky base with hints of clove, cinnamon, and nutmeg. The Maroons used it not only in marinades, but also in their wood fires to infuse meat with a rich, earthy aroma.
