Free’s is the culmination of several years of producing gluten free cooking and baking to rival non-gf foods and baked goods. Beautiful flavour, texture and appearance are key ingredients to the appeal of any foods, but even more so with gluten free. There are some things you just don’t want to live without.
For me, it was pasta and really great crusty bread. Yes, being Italian, giving those up almost wasn’t worth it! In the end, my health was more important than the focaccia, and I embarked upon, if not embraced, the gluten free life-style. Later, Anthony, our youngest son, sustained a head injury and concussion trauma that would lead the entire family to the same life-style, and on the quest for the best products possible. We found those products in our own kitchen, and because we needed to keep it clean in the sugar department too, our recipes evolved to include only non-refined and naturally sourced sugars, right down to milling our own confectioners sugar. From the simplest cracker to the most elaborate cakes and meals, we believe gf should be as good as or better than “regular” foods. In the true spirit of making it well, making it healthy, making it the best it could possibly be, we tested recipe after recipe until we succeeded. We are very proud to bring our product line to market, knowing it’s exceptional, and working to keep it that way! The greatest compliment is the one that comes from the unsuspecting individual who tries the butter tart or cheesecake or baguette, or whatever is on the offering, and says how wonderful it is, but never wonders or asks if it’s gluten free! We love the element of surprise when we tell people they are eating gluten free, it’s a great feeling to know we’ve created food that tastes good enough to be “regular” food. We’ve had many of these compliments, and we hope to have many more. It’s exciting to know that the products we bring to you are worth it!
