Hi Everyone! I’m offering a duo to end the year, pick up on Dec 28th by appt only in dix30 area.

🥓 Maple Cured Pork Belly(Bacon) 🥓
The pork belly slabs are cured in maple syrup then smoked for a long time. To prepare just slice and fry lightly in a pan.

Each portion is approx 2lb before it is cooked

Pricing $30 per portion or $55 for 2 portions.

🦆 Maple cured Magret de Canard 🦆
Each duck breast (Lac Brome of course!) will be cured in maple syrup, then smoked on maple wood. They will be cooked to medium and chilled overnight. To reheat simply pan fry quickly to crisp up the skin.

If you are a fan of pulled pork sandwiches this is definitely a must try. I just got my hands on 2 HUGE high quality Nagano pork shoulders and it will be smoked low and slow for over 12 hours on cherry and oak wood then pulled and tossed with my homemade barbecue sauce.

Howdy! For this Saturday I will be offering the group Texas style smoked Beef Ribs, the newest and most glorious meat trend to hit the BBQ scene. These are extremely hard to find, so won’t be making these often.

The pork belly slabs are cured in maple syrup for a week then smoked low and slow on sugar maple smoking wood. Bacon can be kept refrigerated for up to 2 weeks and freeze well for many months.

Using super fresh Canadian Salmon(sushi grade only). Each salmon will be cured in a maple syrup brine, then continuously basted with maple syrup and afterwards cold smoked for 5 hours on apple wood.

Perfect to eat as is or on bagels or canapés

Hello friends! For this Saturday 🐰 I will be offering the group AAA Prime Beef Brisket aka the King of Texas BBQ 👑

If you haven’t tried real, authentic Texas Smoked Brisket, the kind with a dark, almost black bark on the outside, and a pink smoke ring when you slice, here is your chance!

Each brisket (AAA Prime of course!) will be smoked on hickory wood for approx 14-16 hours just like they do it in Texas.

⭐️ Very limited quantities ⭐️

Brisket will be served hot from 5-6PM this Saturday April 3.

Each portion is approx. 2 lbs and will include 1 lean & 1 not so lean portion.

🔥Pricing is $50 per portion (4-6 adults)🔥

🔪 Can also slice upon request, recommended if eating right away
