​Ever wondered about the difference between Button Chanterelles and their regular-sized siblings? While they are the exact same species, the size difference changes how you cook them:

🟡​Button Chanterelles: These are the young, unexpanded caps. Because they haven't opened up, they have a incredibly dense, firm texture and a concentrated, earthy-sweet flavor. Bonus: They look stunning served whole on a plate!

🌼​Regular Chanterelles: Fully matured and flared out like little golden trumpets. They are softer, more delicate, and perfect for slicing up into classic sauces or folding into rissotos.
