Morning coffee is a job. You drink it because the alarm went off. Two o'clock coffee is different. The work is mostly done. The light is changing. You make something that doesn't need to wake you up - it needs to keep you company.

Brazil Campo Das Vertentes does that. Mellow and sugary with notes of praline and roasted chestnut. Quiet coffee. Good coffee. Worth the second pot.

Russ, our president at Fratello buys the coffee. He knows the farmers by name.

​The Godfather — relabeled as The Goodmother for May — has followed the same recipe for 30 years. Four beans, four farms: Guatemala, Colombia, Nicaragua, Peru. Same growers, year after year. This roasting drum is cast iron.
