Chef de Tournant (aka: Roundsman / Relief Chef)

The Chef de Tournant is traditionally an experienced Chef who serves as a connection between the Executive Chef / Executive Sous Chef and the rest of the Kitchen Brigade. In addition to being able to cover any position in the kitchen, the Chef de Tournant can assist, guide, and sometimes supervise other members of the the Kitchen Brigade rather than

having a singular assigned role. This Food & Beverage oriented page was created by a retired Chef de Tournant and the plan is to post both fun and educational information intended to benefit culinary students and home cooks alike.
