Rice Vermicelli with Meat and Vegetables
Ingredients
For the Meat
* 500 g meat, cut into pieces
* 1 bay leaf
* 1 cinnamon stick
* Black peppercorns
* Cardamom pods
* 1 tsp black pepper
* 1 tsp paprika
* 1 tbsp salt
For the Vegetable Stew
* 1 tbsp butter
* A little olive oil
* 1 medium onion, diced
* 4 potatoes, cut into medium cubes
* 2 celery stalks, diced
* 1 tbsp tomato paste
* 1 can diced tomatoes (or tomato soup)
* Beef broth
* 1 Maggi cube
* Frozen mixed vegetables (carrots, green beans, and corn)
* Cooked meat
* Salt and spices to taste
For the Rice
* 1 tbsp ghee
* A little olive oil
* Vermicelli noodles
* 1½ cups water
* 1 Maggi cube
* 1 cup rice, washed and soaked
* 1 tsp salt
Instructions
1. Cook the Meat
1. Boil the meat with the bay leaf, cinnamon stick, black peppercorns, cardamom, black pepper, paprika, and salt until tender.
2. Set the cooked meat aside and keep the broth.
2. Make the Vegetable Stew
1. In a large pot, heat the butter and olive oil.
2. Sauté the diced onion until soft.
3. Add the potatoes and celery and cook for a few minutes.
4. Stir in the tomato paste and diced tomatoes.
5. Add some beef broth and the Maggi cube.
6. Once it starts boiling, add the frozen mixed vegetables.
7. Add the cooked meat on top.
8. Season with salt and spices to your taste.
9. Simmer until all the vegetables are cooked.
3. Make the Rice
1. Heat the ghee and olive oil in a pot.
2. Toast the vermicelli until golden brown.
3. Add the water and Maggi cube.
4. Add the soaked rice and salt.
5. Cover and cook on low heat for about 15 minutes, or until the rice is fully cooked.
Serving
Serve the rice with the meat and vegetable stew. Enjoy!
