What started as a bit of fun in my parents home kitchen eventually turned into full time jobs for my biz partner and I. We had a commercial kitchen space, a custom packaging range, branded delivery vehicles, managed staff & held pop up events in our local town. At the start of this year, I stepped back and reflected on everything we built — and everything I learnt. Now, I’m putting that experience

into Kneada: a space for thoughtful recipes, practical guides, and a gentle hand for other bakers and small business dreamers. Whether you’re here to recreate our best-loved bakes (IYKYK) or grow something sweet of your own, I hope you find something helpful here.

It’s actually the ONLY way I’ll do it now!

This method helps me save time, make the most of quiet days and allows me to keep different flavours on hand, for fresh cookies whenever I need them

Once the dough is made, portioned and weighed into cookie dough balls, it goes straight into the FREEZER

No fridge time, and then I bake straight from frozen

The freezer helps to:

💛Firm up the butter fast (butter goes into the dough cold, straight from the fridge)
💛Controls the spread when they go in the oven
💛Keeps cookies thick without drying them out
💛Saves TIME & stress (a big bonus for home bakers + sellers)
💛 Reduce waste because you only take out & bake what you need

This way, I can build up a supply of different flavours and store them in my freezer

Then I have cookies ready to go in the oven and bake

It means I could say yes to last minute & large orders

Or bake my friends & family a cookie whenever they have a craving

My cookies have never baked so consistently until I started baking from frozen

This is a round up of my best selling menu items.. over the years a few things have been added and taken away but these were all staples! 🫶🏼

They’re all easy to follow recipes and perfect to bake in larger quantities when you’re selling too. I also love having different flavour choices in each of these to keep it fun for people who are buying

Even though I love them all, cupcakes were always my clear winners no matter what. They make the perfect gifts, corporate customers love them in large quantities and they’re quick to whip up

From missed orders to failed equipment and delivery chaos, business definitely isn’t always plain sailing 🫠

I used to take things like this really personally when they happened.. Luckily I didn’t have too many actual disasters, but moments like these are exactly why strong systems and processes matter so much

A lot of the stress in my business didn’t come from my products (they were pretty solid), it came from everything happening around them

Over time, I built processes that kept everything running smoothly for 10+ years… and I’ve now put all of that into my Bakers Bundle so you don’t have to figure it out the hard way 🫶

So many bakers make the mistake of creating a big menu to try & bring in the orders. I’ve definitely been there too but learnt the hard way that more isn’t always the best option!

These are a selection of the products I actually sold in my business, a few didn’t make the final cut and some were only limited edition

For me, cupcakes, brownies & cookies were my staples - ALWAYS! The ones that consistently made a profit and people actually ordered on repeat

I also loved bundling together these products to create selection boxes like in the first pic. This makes is super fun for the customer because they get to try a little bit of everything instead of a standard cupcake or cookie box

It’s important to review your menu often and see what’s working!

My cookies started out like flat and flimsy disasters!

I thought because I was a ‘good baker’ that I’d be able to make them, but it wasn’t the case. It took a lottttt of trial and error for me to get them perfect and consistent

But once I did, I knew I didn’t need to bake another cookie recipe again

These are literally the ONLY cookies I’ve baked and sold for almost 6 years and I still get excited to eat them

All cookies are not equal - these taste as good as they look & I’m sure that’s why they became a best seller! Not all recipes are designed to be thick, chunky or hold a filling but luckily these do it all 😎
