Let your meat rest before devouring it! 🤠

Cooked meat should be allowed to “rest” after cooking and before cutting. This permits the juices to be reabsorbed into the fibers of the meat. If you skip resting, you will lose more flavorful juices when the meat is cut. General rule of thumb is to rest the meat for 5 minutes per inch of thickness.

Did you know blood is not what makes beef "red meat?" Rather, a protein called myoglobin gives beef a red color. Myoglobin stores oxygen in muscle cells and is a richly pigmented protein! The more myoglobin there is in the muscle cells, the brighter red the meat will be.
