𝐒𝐂𝐈𝐄𝐍𝐓𝐈𝐅𝐈𝐂 𝐅𝐀𝐂𝐓🔯: The browning of cut apples is a chemical reaction called enzymatic browning. It happens when the enzyme polyphenol oxidase (PPO) in the apple reacts with oxygen and phenolic compounds, creating brown pigments called melanins. It's like edible rust caused by air exposure!

With recent news about Loblaws' new discount policies, we've read so many perspectives about how our community is reacting to this corporate greed, how it affects our budgets, and what we can do about it. We believe the most powerful choice may be to put more energy and effort into supporting local producers and businesses at places like our farmers' markets. Not only do these choices feel positive and impactful, they have multiple benefits to us and our communities. Sure, Loblaws' business may not notice you missing, but local businesses notice if you show up ❤️

Some buy-local messaging can make consumers feel it is all or nothing, but we believe this is not helpful in building our movement. Small shifts towards local purchases, maybe even one at a time, can make buying local more sustainable and enjoyable.

Tomorrow is Market Day! For primary producers we will see the return of Blackbird hollow with their cold and flu fighting tinctures and Seven Acres Farm & Ferments with all things ferment. We will also host Meversible, Claude Fulton and Wispy reimagained Clothing for artisans. This will be rumtopf farm's last week in attendance before taking the month of February off to rest. Our biweekly vendors include Roma Cheese Ltd. and Paterson Higgins. The rotary club will also be in attendance in the Community Space. See you at the Community Centre between 8 and noon- come shop and suppor local!

CAN YOU GET PRODUCE IN THE WINTER IN NOVA SCOTIA? The answer is YES 👀🥕

How? Many farmers utilize cold storage and greenhouses to keep a supply of vegetables and fruit available throughout the winter months. Varieties of squash, potatoes, carrots, onions, winter radishes, leeks, beets, cabbage, apples, rutabaga and more are grown during the summer and fall season, and are stored to preserve their quality. Kale and microgreens are common to find all year round as well, and some farmers may have more variety of greens for the most nourishing winter salads.

Our mission is to “Locally grow apples in an ecologically sustainable manner without the use of synthetic pesticides, fertilizers and preservatives, processed as naturally as possible to optimize safety, nutritional value and flavour."

Serendipity played a role in coming up with flattening the mature vegetation to manage the orchard's ground cover. https://www.youtube.com/watch?v=YTk6lcgiFmM This allowed Richard Hennigar to develop a production regime that requires only human energy to produce the crop. Heavy pruning required in some other blocks at times utilizes a thirty-seven year old 1840 John Deere tractor and heavy duty mower to mulch the brush and leave it in the orchard, part of a strategy that mimics a forest ecosystem as dead wood and mature vegetation add 2% biomass each year to replace nutrients removed by the crop. The ant hills that flourish without mowing are recycling sulphur back to the surface from its widespread use as a prechemical fungicide and high sulphur levels encourage nitrogen fixing which also feeds the trees.

The short summary of our juice is fresh, pure, tasty, local, pressed fresh every week or fresh frozen for the summer months. We harvest at full maturity so the apples can finish ripening in storage and press locally at Foote Family Farm in Woodville.

Each variety has its virtues. The Redfree is very low acid for O blood types who have higher stomach acidity. Prima hangs on to its tartness even when it is fully ripe and sets up a thirst quenching pink lemonade experience of tart and sweet. Novamac tends to grow small to medium and provides snack size minis, the healthiest apples with highest nutrient levels with high skin to flesh ratio. Novaspy is the ultimate multi-purpose apple as it also meets the culinary gold standard of Northern Spy prized by the pie industry and is available year round.
