Let’s talk vanilla! 🥞
One of my kitchen mottos has always been, “Never trust a baking recipe without vanilla.” So when I started developing our baking mixes, I immediately ran into a problem.

I wanted the mixes to be shelf-stable, made with wholesome ingredients, and free from synthetic flavours. But vanilla doesn’t exactly cooperate with that plan. Most vanilla comes as an extract or paste, and I couldn’t imagine releasing a baking mix without it.

So I started experimenting.

After plenty of testing, I began sourcing beautiful organic vanilla beans, tested and tested and tested, to turn them into a fine vanilla bean powder that could be blended directly into the mixes.

In fact, I love the vanilla powder so much that, what started as a solution for our baking mixes has completely taken over my own kitchen. Now I use it in almost everything I bake. 😅

It’s a tiny ingredient, but it says a lot about how I approach baking. I’m not interested in cutting ingredients just to get the shortest ingredient list possible. If an ingredient adds flavour and belongs in the recipe, I want it there.

And for me, vanilla definitely belongs!

Good Morning Flapjacks 🥞

This mix might be the most fought-over job in our kitchen. The kids regularly chase me out because they want to make pancake breakfast, or lunch or dinner, themselves!

To make a batch, simply combine:

• 260g of our pancake mix (one full small pouch)
OR
• 1¾ cups mix from the larger pouch

with:

• 1 egg
• 1¼ cups milk
No milk? Water works too!

Whisk, pour, flip, eat.

Want blueberries? Toss them in. Chocolate chips? Go for it. Cinnamon, bananas, fresh berries… make them your own. And yes, this mix makes delicious waffles too.

Made with freshly milled whole grains and organic ingredients, with no preservatives, additives, enrichment, or mystery ingredients. Just simple ingredients that taste incredible.

Each pancake packs about 6g of protein along with plenty of fibre, helping keep little tummies (and grown-up ones) full all morning.

These mixes are perfect for busy mornings, camping trips, cabin weekends, Airbnb welcome baskets, hostess gifts, care packages, and keeping a simple breakfast option in the pantry.

And yes, I’m biased… but these are still my favourite pancakes. Soft, fluffy, lightly sweet, and somehow they disappear from the plate faster than I can make them.

One year ago, we wired the money for our stone mill.

This week, our new commercial kitchen officially received approval, giving us the space and freedom to grow in ways we’ve been dreaming about for a long time.

Between those two moments were countless hours of learning, building, testing, milling, designing, dreaming, and more paperwork than I ever thought possible.

We’ve spent the last year working to create the flour I always wished existed while building a business that could share it with more families.

There were moments when it felt impossible. There were moments when I wondered who I was to be doing this at all.

But here we are.

For the last couple of months I’ve had one question come up again and again:

“Do you have a pizza flour?”

The answer has always been… sort of. 😅

Our bread flour makes a wonderful pizza, but I’ve been chasing something more specific. I wanted a whole wheat flour that could create a crust that was both soft and strong. Something that stretched beautifully, held its toppings, and could be picked up and eaten like a great pizza should.

Tonight I think I’ve almost achieved my perfect “Pizza blend.” I think I’m getting very close to the pizza flour I’ve been dreaming about.

There’s still more testing to do (including a 24-hour dough waiting in the fridge, stay tuned tomorrow), but I’m excited.

And if you’re a local pizza maker, wood-fired pizza enthusiast, or pizzeria owner who loves experimenting, I’d love to connect. I’d love to get this stoneground, whole wheat flour into a few more hands, and see what it can do in real world scenarios. 🫶
